Hi, I made my first ever quiche the other day and while it tasted amazing when it was warm, once it had cooled (which is the way I want to serve it at a party in a couple of weeks time) it was far too creamy.
The recipe called for a whole tub of cream, which I gather from other receipes I have seen is pretty standard. Is there any way you can substite some of the cream for anything else (like milk for example) and what effect would this have on the texture of the quiche?
Also I would like to try making mini quiches, can I use the same recipe as for a large one and in what way would I need to change the timings/temperature when it is cooking?

I only use milk in mine - 2.5 fl oz per egg. I would think cream would be very rich.
Same recipe for mini ones - take 10 to 15 mins to bake“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

Second the milk.
When mother taught me to make pies and quiche, she only ever uses milk in her quiche. her quiche are lovely......Somehow I can't make mine as nice as my mams.Grocery Challenge. £400. - £35.22 + £19.80 + £109.01 = £164.03

Only ever used milk and eggs in mine too,far too expensive to use cream, although I suppose a dollop wouldn't hurt if you really wanted to along with the milk.I love HM quiches or as it was called when I was a little girl 'bacon & egg pie

Hi spuddy,
I regularly make quiche using only milk and they're delicious. For mini quiche I usually make them in my yorkshire pudding tin and keep a close eye on them, buit they usually take half the time it would take to make my normal 11 inch quiche.

When we recently made a cheese, sausage & crispy bacon quiche we used eggs and milk, no cream, although i can see how i might like that..........:rotfl:
Maybe you could try milk, crème fraiche or maybe greek yoghurt?0 -
Thanks everyone for your replies. The cream came off the websites I had been looking at so I should have known there would be a better (and cheaper) way of doing it!

Can quiche's be frozen ok?? Ive never made one and am having a day in the kitchen today so would love to try, but already got my meal plan doen this week so want to save it for next week.....mind you i can have it for lunch i suppose..hmmm lol0

ive got a set of mini flan baking trays so im looking for some tried and tested fillings. someone at work recommended the rolo one and although it worked ok im not keen on them .
