Quiche ideas recipes and questions (including mini quiche)

The cheese is to add extra protein and flavour; it's the eggs that make the savoury custard, so it doesn't matter if you use Philly cheese.
Add things like mushrooms.
A mixture of cooked diced vegetables with a few peas for colour!
Broccoli is nice in Quiche, again, cook it slightly first.
Asparagus; how rich are you!0 -
Hmm...dunno, I don't remember ever seeing her buy it and I can't stand the stuff!
I can use philadelphia, so it's other things to go in the quiche that I need ideas for really, like the spinach that merlin mentioned.0 -
I don't always add cheese I use 6 eggs a tub of cream S&P and veggies of choiceBlessed are the cracked for they are the ones that let in the light

Asparagus would be nice. I could forego my eating seasonally on this occasion.

I made a quiche last week for DH to take to work with salad for his lunch and I just put what we had in the fridge/freezer in it. Sweetcorn,peas,mushrooms and peppers and then sliced some homegrown tomatoes on top.0

er - why make quiche then? make a frittata instead! its like a very substantial omelette filled with any meat or veg mix you fancy. no pastry case just cook your veg, add some chopped ham or whatever and mix with at least half a dozen lightly whipped eggs, some salt, pepper a few herbs if you like (oregano is good). then either cook gently in a frying pan until set or turn into a buttered oven proof dish and cook in a medium until the eggs are set (depends on the depth of the mix but I find it can take anything from twenty minutes to forty minutes). I just sort of guess at it, but recipes should be available online!

I would have suggested this - I also bake mine in the oven at a medium heat until done. I fry some onions first until caramelised, mushrooms would be good too, and add small cubed potatoes to bulk it out. Spinach would also fit in well with this. Adding cream to the egg mix makes it richer. Serve with crusty bread and a bean salad.
If you have lots of eggs, can you make a lemon meringue for afters? I don't do pastry with mine, just the lemon and the meringue in a dish.0 -
Hi,
My mum makes lovely quiche. She does leek and mushroom, broccoli and mixed peppers, and a yummy non-veggie one with bacon.
I find the trick is to always use soften onions in the mix, and to add a pinch of oregano (thyme is good too) - it really lifts the flavour if you're afraid it will be bland.
I use the same egg mix for tortilla / frittata too.

Yes, I make fritatta regularly as I've got 4 chickens (hence all the eggs!) but I wanted something a bit more substantial which is why I thought of quiche. Caramelised onion sounds good, as do peppers and mushrooms so I think I might do that.
