Hi StaceyDaisy - I use a flan dish for quiche everytime - always works well - just remember to grease it first with butter or similar or the quiche will stick and not come out in nice neat slices. I think HM quiche is great and very moneysaving even if you buy the pastry - you can always use whatever you have leftover in the fridge - few garden veggies, couple of bits of bacon or ham - anything you want to use up and not waste - I don't think I've ever made the same combination twice!! goodluckIf Life Deals You a Lemon - Make Lemonade!! :j0

A flan dish will be fine. I've made HM quiche in all kinds of dishes, including a pyrex dish lid when I was younger and without 'proper' kit. The flan rings just make it easier to remove but if you blind bake it first (parchment paper in the raw pastry case filled with rice if you have no baking beans) and cook the filled quiche in the lower half of your oven, it should be easy to remove. I am self taught too:) there are a lot of us here who have mums that didnt teach us the basics. OS has taught me loads.
I use a flan dish - but you could use either.

A filling alternative to traditional quiche (and one that guys seem to like) is to line your flan dish with a layer of mashed potato instead of pastry before butting your topping on. It's worth giving the potato base 10 mins in the oven to dry/firm it before adding egg mixture.
I wouldn't worry about the container, use what you have. Unless it's for a posh party you can serve it from the dish, doesn't need to be turned out.0 -
I've got mum coming to stay next week and I'd like to make a quiche for one of the meals as we have tons of eggs. The only problem is mum only eats soft cheese (philli or own brand) so I can't use cheddar or anything like that in the quiche and I'd prefer it to be vegetarian so that I can eat it too.
I'm stuck for ideas. Normally I'd use goats cheese or a mix of cheddar and parmesan. I have used soft cheese in quiche but I used it with other cheese too and I'm not sure what else to put with it.
So, I though I'd ask you lovely lot because I know you'll come up with some great ideas!0 -

I don't think she would eat ricotta, but I suppose I could substitute it with philli.0

Would she eat cottage cheese? Remember having quiches on diets that used cottage cheese instead of the higher fat stuff.
