  • Instead of baking beans i used some pebbles from the garden wrapped in tin foil! Was going to use dried peas or similar but couldnt bear to waste things which were edible. I never use cream either, just four eggs and a "big slosh" ;) of milk

    There's a recipe on here somewhere for baked bean tarts, you could probably make it into a full sized quiche. It was pastry case, line the bottom with cheese, put some baked beans and cooked pieces of bacon on, then top with egg and milk mixture. I haven't tried it yet but it sounds lovely. I never blind bake pastry bases either, just chuck all the filling on top and cook, never had any complaints yet!

  • I cooked a quiche from the freezer the other night- I haven't made quiche for ages prior to that. It looked great and tasted fine but the base was a bit soggy- probably because I put some chard in it from the veg patch (I think it's quite a 'watery' vegetable?) and also perhaps because I cooked it from frozen. I used a mixture of eggs and yoghurt- a suggestion Delia makes in one of her cook books, and I had some yoghurt that needed using up.

    The leftovers which we had the next day were less soggy. I will try again though because it was so convenient and my pastry got a big thumbs up from the family!

    Hi All

    Hope you are all feeling better than me today - I think the cold I have been fighting off (NOT man flu you note!) is finally getting the better of me :(

    I have the Lakeland mini quiche tins - they are about five inches across, and I wondered how long I would blind bake the pastry for in these tins? Also do I need to adjust the temperature when cooking the filled quiche as they are smaller?

    I plan to make quiches by adapting existing recipes and using up our leftovers. I think using the mini tins will be good because I can do different fillings for the fussier eaters etc.

    I have been getting pretty creative with our leftovers recently and have managed to reduce our household rubbish to half a bag a week for the four of us. Admittedly my new wormery is helping as well :)

    I have looked through the quiche threads we have and can't find the answer but hopefully someone will be able to help.

    Any other mini quiche tips will be very much appreciated :)

    Hi lbt,

    When I'm blind baking the pastry for mini quiches I normally cook them for about ten minutes, keeping an eye on them and giving them a little longer if they need it. I don't adjust the oven temperature for mini quiches but they will cook more quickly than full sized quiche so I reduce the time in the oven to about 15 minutes and again keep an close eye on them.

    Thanks Pink - do you use baking beans or just bake them as they are? Not sure if the beans are necessary because they are smaller.
  • I don't have mini quiche tins, but do you think it would be possible to do mini quiches in cake or muffin tins?

  • Yes you can kirstyreanne, i used to do cheese and onion tartlets in bun tins
