Yes eggs in the first two but the third one is more like a pizza. I did fry the onions and it all looks ok. Guests just about to arrive to better get on with it.

if there's no eggs in it, it isn't a quiche! more of a tart.... sounds very tasty either way! call it tarte a la moutarde!

    ello :)

I have loads of leftover Gammon, eggs and cheese that need to be used by today! Well the gammon and eggs that is!

I really fancy making up some quiche to freeze in portions for lunch boxes but I don't have any baking beans to bake the pastry first - do you have to blind bake the case or can you put filling straight in and then cook?

Also I don't have any cream and every recipe I have says to include cream but I seem to remember at school making one without cream?

    Cheers

    Hi there.

My mother never used to blind bake the pie crust this made the pasty base softer kind of soggy than it would if you blind bake it (I've blind baked but never used beans I just prodded the pasty with a folk and cooked a little before adding the quiche mixture) My mother also taught me and always made her quiches with milk not cream and they were always lush :o

I would just make as you would with milk and eggs insead of cream and eggs,
I could give you a recipe though not an exact one as I was just taught to guess measurements lol.

I have no baking beans either. Sometimes I just use stuff like dried lentils or even soup mix. Seems to do the trick. On other occassions when in a bit of a hurry I just make the quiche without baking blind first and no-one ever complains!

As for cream, like you we didn't use cream at school. Just good old fashioned milk on its own. Would put cream in now but only if I had it spare. Get cooking:rotfl:
