Quiche ideas recipes and questions (including mini quiche)

Can anyone help.. the last time I attempted a quiche (from my delia book) I did not get the pastry part correct as I could not do the bake blind bit.. I tried foil and pricking it but just kept reducing to nothing at the sides and rising in the middle.

I have just been searching the site and we appear (unless I carn't find them) to be very low on quiche recipies.

Would anyone be so kind as to post some.. including any that do not require you to bake blind.

    If you go to our Old Style Recipe Collection - the thread, not the index, and then type quiche into the search this thread box - you'll get a few quiche ideas. I'll link direct to the thread for you here but anytime else you need it just use the blue bar at the top of every page.

    As for baking blind... I tried it once with those proper beans and then spent ages picking the darn things out of the pastry so I've never bothered baking blind since. Normally I just prod the bottom of the pastry a good few times with a fork. :)

  • i haven't made a quiche with pastry in for years, i jst lob the middle bit ingerdiants in a flan case (greased lightly first), and bake that. not what you are looking for i know, but great if your on a diet and don't want the pastry.

    When you make the pastry case you need to let it rest for a while, preferably in the fridge, as the pastry will shrink as it relaxes then you can trim it and bake it. To bake blind, line the case with greaseproof paper (not foil) and place something like rice or dried beans in to hold it down and prevent the pastry rising in the middle whilst it's cooking. After about 10-15 mins (I think! - forgotten now without looking it up) you can remove these and continue to bake as normal :)

    I do that too! I love pastry-less quiches, or if I have any bread going slightly stale then I break that up and layer the base of the flan dish with it. That's why I'm a bit rusty on the timings for the pastry case as it's ages since I've done one LOL! ;)

    Squeaky... thank you.. had not noticed the search this thread only before.. the times I have gone through the whole thread looking for something!!!!


    However, we still do not have many.. If anyone has a good one to share please post away.

    But yes, I did - and the pastry rose anyway and the beans all stuck in the side walls.

    I never bake quiche blind.

    I just line the case with the pasty, put the filling in and bake it all together.

    This is the basic recipe I use:

    hi

    i used to run a kitchen at a garden centre before having thr kids and we we're well known for our quiches. we never baked them blind. line a dish with pastry put a covering of grated cheese on the bottom then top with

    cheese chopped up onoin
    cheese chopped up onion and sliced tomaro
    cheese sliced tomato
    my favourite cheese and cooked broccoli
    stilton and broccoli
    cheese sweetcorn and tuna
    cheese and cooked sliced mushrooms
    cheese cooked mushrooms cooked bacon sliced tomato and chopped onion

    i could go on forever or any of the things above mixed about what ever you fancy really

    we then topped it with beaten egg milk and salt and pepper sorry can't remember exact amount of egg to milk think it was 6 eggs to a litre of milk??

    cook for 45 mins to 1 hr or until set gas 4
