Hmmm....I need to knuckle down to some form of healthy eating plan too I think. I highly recommend bean chilli done in a slow cooker - fry off a couple of onions and plenty of garlic and mix with the beans (after soaking dried beans overnight), a can of chopped tomatoes, some decent dark chocolate and lots of Worcestershire sauce, pepper, chilli seeds, cumin and corianderPerfect with some long grain rice and a blob of creme fraiche if you fancy... It's a cheap and cheerful meal, is easy to cook and has minimal dishes to do afterwards.

That sounds fab edinburgher, I recently bought a slow cooker but never sure what to cook in it! It has chocolate in it too, I love dark choc!
Was just gonna ask EH what you did with all the pulses, I have lentils and chickpeas etc., in the cupboard going to waste.
Well soup all blended and have looked out my flask for tomorrow. Cut up some carrots to have with houmous (everytime I buy houmous it ends up in the bin), got mini pots this time. Also got some grapes, a piece of dark chocolate (heard this aids digestion)a yoghurt and some pineapples. Only bought the yoghurts yesterday and out of date tomorrow, should really check the dates.
Anyway meal plan for the rest of the week as follows: (will check yours out soon missymoo)
Wed - Lunch (as above), dinner (depending on whether OH coming down or not), chicken fillet in shake & bake (breadcrumb thingybob) with corn on the cob, veg and salad potatoes.
Thurs - Lunch (Chicken Pasta with peppers/sweetcorn), yoghurt, grapes, pack of Quavers (only allowing myself crisps every second day)
Dinner - Sweet potato mash, cabbage and grilled chicken.
Fri - Lunch same as Thursday plus grapes and kiwi fruit.
Dinner - Lasagna (made with turkey mince) and garlic bread.
Cereal for breakfast all days. Drank a litre of water today, hoping for a litre and a half tomorrow.
Sounds good if I can stick to it and not run out of money before pay-day. Why does eating healthy need to be expensiveSuppose it doesn't if you plan it properly I guess.
Well off to bed soon and will also declare today a NSD. Nite all.

Love the determination!
Re the houmous - save the little tubs and wash them out. Next time you get houmous transfer it into the little tubs and stick them in the freezer and take the small tub out on the morning you want it (or stick it in the fridge the night before!).
Just a little tip for you.
I went back to work this week - yesterday was hard but today is much better. We're due to get heavy snow tonight so will see what happens about going to work tomorrow!

What sort of beans do you use edinburgher??
We've been using a mix of red kidney beans, black eyed peas, borlotti beans and canellini beans.
Also - if you're a houmous fan it's cheap and easy to make huge quantities if you have a food processor and can lay hands on dried/canned chick peas, tahini, garlic, lemons and some olive oil. The best houmous I've ever had has all been home made.0 -

I've joined the weight loss thread yesterday as I want to lose 9lbs. I managed to put on 5lb over December!! It's on the DFW bit. Unfortunately I forgot to subscribe to it and now need to go an look for it. I don't trust myself with houmous as I absolutely adore it and can't stop myself eating it once I've started.
