How about:
Catrina's chicken and brocolli pasta (about 22nd post down) I've done this using whatever veg I have in the freezer (best with brocolli/ cauli type rather than peas) but now I keep a bag of brocolli in the freezer cause it's so yummy ;D or;
Cut the chicken into strips and fry 1/2 way through add paprika, hot chilli powder, cumin, oregano (2:2:1:1 ratio) for a fajita type flavour and serve on top of the noodles (if you buy pepper add that in with the chicken) you can make it cooler by using normal chilli power and mixing spices into a watery paste with some water first or;
A packet of stuffing mix (not made up, left dry) or a mixture of whatever herbs you've got that 'go' together, some flour. Mix the flour and herbs together and spread out on a plate; rinse the chicken under the tap and leave a bit wet. roll the chicken until it is coated in the flour/ herb or stuffing mix. Put on a baking tray and bung in the oven until cooked. This is from a weight watchers recipe book so it's low fat (unless you serve it with home made chips ::))

Went for the pasta and tomato sauce option last night, but added some chopped up bacon, which I found lurking at the back of the fridge.

One really tasty recipe is morroccan spiced chickpeas.

1 large chicken reduced from £6 to £1.75 in freezer. Made sunday roast - fed four.
Sunday night made stock from carcass (have frozen part of stock). The remainder I whizzed with the chicken bits from the bones and veg in stock and made a soup for my lunch today which I had with fried bread croutons (these were made from stale loaf).
For dinner tonight chicken, mushroom and bacon bake mixed with remainder of chicken soup - fed four.
Still loads of cooked chicken left for tomorrow.
Any ideas?

for the evening we will have chicken mince (reduced in chiller cabinet and the frozen) a sprouty onion and wrinkly pepper and a jar of fajita sauce (bogof?) which I will try out in the slocooker and serve in pittas which are currently frozen but I will toast 'em
but the chicken is tonights delicacy and it means I get longer to worry about how to use my beans!Blah0 -
that sounds delicious - i made a sort of special fried rice one of the days between chrimbo and new year with bits of turkey, ham, prawns and peas and my homemade egg flied lice. yum yum. mmmmmm
and does it fit in with Slimming World? cos i'm re-joining tonight. ::)0 -
Egg Fried Rice
I boil american long grain easy cook rice (whatver portions you l ike per person) and strain it and leave it to cool a little (not tried it with any other type of rice with this as basmati is too delicate generally and thai rice too sticky)
then crack and mix two eggs (at least) per person and fry into a sort of omelette using (not olive oil) fry light (sometimes I add a bit of milk but not always). the trick is not to have the pan too hot to start and to use as much oil or fry light at you dare or as your syns will allow.
cook the egg until it is JUST set. you really need to watch it that it doesnt go brown underneath. you dont want it too firm but you also dont want it too sloppy. it does take practice, and for some reason a metal fork is the best implement for moving it around the pan. BUT you are not making scrambled eggs so keep it a sort of solid omelette shape!
anyway, once the egg is set, take it off the heat and start to chop the egginess up a bit into little chunks and stir in the cooled strained rice. return to heat and then add soy sauce to steam and flavour the rice back to temperature. I tend to use the light soy sauce or the lower salt version but dark is fine too I think, just a slightly more intense flavour.
and that really is it. its a great way of using up left over rice as long as its not been sitting out on the side too long (rice harbours l oads of bugs for foodpoisoning so be careful and bring it right back up to super hot)
I have found with chinese type stuff, less is more, and its best not to mess around too much with stuff, keep it simple and add extra flavour at the table if you want it (I love the blue dragon thai chilli dipping sauce)
on slimming world my egg fried rice is free on a green day providing you use fry light
I've added stuff to it to make it a special fried rice like peas and prawns and some ham and turkey (healthy extras on SW) between chrimbo and new year and it was lurvely.Blah0 -

Chicken curry - add various spices & tin of tomatoes. Leftover spinach & plain yoghurt are added if they're hanging around the fridge.
Thai Green Curry - use tin of coconut milk & green curry paste from fridge.
Chicken & sweetcorn pasta bake - add sweetcorn, tinned toms, cooked pasta & bake in oven. Cheese on top if you like.
Stir fry - add whatever veg you like & either noodles or (cooked) rice.
Or the number one choice in our house "Chicken muck up"
Fry onion & mushroom, add chopped cooked chicken & a tin of condensed mushroom soup. Bulk it out with frozen peas & sweetcorn. Serve with rice.0 -

whilst I was fidding with me fajitas so to speak (which smells divine) - I was thinking about coronation chicken for the left over cold stuff - to say have in a jacket spud or something. I've never made it but presume its something like mayo and curry powder ... any ideas?Blah0 -
Yes coronation chicken is (i think) mayo and curry powder. I don't know if you'd be able to use low fat fromage frais instead if this is still free at SW
