    Yipppeeeeeeee!

S'ok, I did it! Finally decided that I needed some inspiration so looked at some of the old recipe threads and then went hunting in cupboards.

I found a recipe on the potato website for a potato & veg lasagne and I've made that tonight ;D

had some ready roasted potatoes in freezer :-[ Cooked them and sliced them.

Made veg filling sauce from: Courgette, carrot, mushrooms, onion, garlic, cherry toms, brocolli & sweetcorn.

    Made cheese sauce.

Layer of lasagne sheets, veg sauce, layer of potatoes, repeat & topped with cheese sauce.

Its in the oven now ;D ;D

Its not healthy but to get to the point I have PMT & it sounds, looks & smells like perfect comfort food ;D ;D

I only had to buy the brocolli & got some extra & as I only used the very top of the 'trees' I'm making a broccoli soup tomorrow.

I checked out my cupboards and have some packets of coscous so will be making that & adding a tin of mixed beans and will prob make a tomato sauce to go with it. Mr Q & kids will have some sort of meat out of freezer with this probably.

Will also be making more cheese sauce to go with some pasta & sweetcorn & frozen peas (like macaroni cheese ???) for me and adding tuna for the kids (I'm a veggie).

Oooooooo, I could start enjoying this ;D

Thanks to all of you for the inspiration :-*

Well done Quackers, that lasagne sounds lovely.

You lot are putting me to shame, I must win the prize for the least original dish. We still have loads of food in the house so dont need to do a full shop this week but the fruit bowl is getting low so my son had baked apple and custard, using the only cooking apple we had left and his sister had banana and custard (banana has been living in the school packed lunch box the last 3 days!)

One thing that was a hit though, I made the chick pea and potato curry tonight using Ssavers recipe. It went down a treat with all of my lot. The first time I have used dried chick peas.

Yes please!  I have a pack of 'bacon bits' so I'm looking for ideas.

    1 pack soft tortillas
    1 quantity cheese sauce
    bacon
    mushrooms
    onion

finally chop bacon, onions and mushrooms (or whatever you have. The finer you chop it the further it goes) fry in a oil or butter.
Warm tortillas. Put some cheese sauce on each one and top with the bacon/onions/mushrooms. Roll each one up (tuck the ends in first it's easier).
Put in a oven proof dish and top with remaining cheese sauce. Top with grated cheese and grill til it bubbles.

Using up leftovers can help you find new recipes you might not have considered otherwise. Last night we had leftover meatloaf from another meal, and a packet of economy pasta in cheesy sauce. I warmed the meatloaf slices in a casserole dish, then poured the cooked pasta on top. Bit of grated cheese and returned to the switched off oven to melt. Yum!

I'm a recent convert to meatloaf. It makes a change from spag bol/chilli with cheap mince, and because it slices I serve it like a roast with yorkies and gravy. No-one seems to mind and it's much cheaper than buying a joint.

My problem with storecupboard challenges is that I stock up on bargains and now I have a freezer full of chicken and 20p a pack sausages. Factor in the assorted pulses and we've got enough protein for a month's meals. I think there'd be a riot if I served nothing but chicken/sausage/lentils for weeks :o

But now I'm REALLY determined to clear out the fatty stuff because I've joined Weight Watchers. The chicken is fine but those sausages must go ;)

not if you grill the sausages surely they wont be too bad
I often make sausage casserole in the slow cooker with sausages and lentils or dried beand and its yummy. If you are too worried about fat you could leave it to cool and take the fat off the top.
Remember that we need fat for the hormones in our bodies to funcution effectively. And kids need more fat in their diets proportionately then adults do. It is essential for a developing brain.

Okay you lot (of very nice people :) ) - got a pack of mince out of freezer for tea tonight and was going to make spag bol but really don't fancy this any more. So... what can I do with it!

got a cupboard/fridge/freezer full of ingredients so probably got everything you could come up with (almost!) to go with it

Instead of spag bol - what about spaghetti and meatballs in tomato sauce? - mix the mince with an egg for binding and some breadcrumbs if available and herbs, shape and cook in a tomato sauce made with tinned toms, onion and herbs..

I am just going to mention ideas rather than give recipes as I am sure they are probably already on this site.

Home made burgers with baked potato, chips or salad.

    Chilli con Carne

    Shepherds Pie

    Lasagne

Pancakes with mince tomatoes onions etc put inside then rolled up, or stacked.
