I've been trying to stick to the Storecupboard challenge by using up the contents of my fridge over the last few days. Normally I'd look in the fridge, feel uninspired & rush out to buy lots of new veg, leaving whatever's in there to go mouldy ::) This week I've banned myself from buying any new fresh veg!
I made a lovely stir fry the other evening by shredding lots of uncooked vegetable 'leftovers' & frying them with chicken from the freezer . From memory, I think the stirfry included cabbage, leek (half, left over from another meal), a stray carrot (where did it come from???), courgette (half, another leftover that I'd normally throw away) & peppers (looking a bit tired, but never mind) It looked & tasted exactly the same as some of the expensive stir-fry veg that you can buy in pre-prepared bags in Sainsburys. I was rather chuffed with myself!
I've still got a bit of uncooked cabbage left. Any ideas what to do with it, bearing in mind that I'm on the GI diet (so no cheese, cream etc)?0 -
Well done for the stir fry, I think it is a bit of a con what the supermarkets charge for them so keep it up you will save loads and get healthy too!
If it is a white cabbage try making a cole slaw but instead of using mayonnaise use lemon juice, it's lovely really refreshing just add some shredded carrot and onion or apple (whatever you have lying around!)
If it is a green cabbage have you tried making bubble and squeak? Is that allowed on your diet?

Bacon egg and pea thing
3 slices of streaky bacon cut into small pieces
handful of frozen peas
3 eggs
splash of light soy sauce
fry the bacon and peas in a small frying pan til the bacon is a bit crispy unless you like chewing fat
mix the eggs then cook a bit like scrambled egg, then add some soy sauce and cook a bit more.
It's all odd stuff I had lurking around the fridge and cupboards.

You could use up the cabbage by making a soup, or else cooked and mixed with cooked mashed potato and onion then dry fried or baked in rounds.
Cabbage is also nice stir fried with apple and onion to accompany meat fish etc."This site is addictive!"

I used up half a cabbage last night. I fried a chopped red onion then added the shredded cabbage and a quick grating of nutmeg then stirfried it. It was lovely, we had it with some roast sweet potato & a big chunk of sirloin steak from the market.
If I'd had any left over bacon I would have chopped that up & added it to the cabbage too.0 -

scrimperjan, i use bacon bits or lardons quite often. I like them fried off with some onion and a tin of tomatoes to make a sauce for pasta or chicken.
Otherwise what about frying them, add a splash of old white wine, a couple of table spoons of half fat creme fraich and some cheese to make a quick and easy carbonara style pasta sauce.
when i think about it - if you have egges make a normal carbonara - bacon, eggs and cheese.
Last night I made the onion and rosemary risotto. It was delicious! I had thought that I had made enough to include today's lunch, but found that I ate it all :-X

Pleased you liked it ;D it is yummy from so few ingredients. Another is the prawn and pea risotto from one of Jamie Olivers books, but i only make that in the summer when i have fresh mint in the garden
