    This is my recipe for 'Mums Oaty Biscuits'. Well - its my mums recipe as you can maybe tell, but they are FABULOUS and I have used white sugar instead of the brown and they are almost as good. Imperial measurements (showing my mums age), but not difficult to translate - eg multiply by 25 for a rough gram equivalent

    Ingred

    8oz flour
    8oz oats
    8oz marg
    3oz soft brown sugar

    Beat together sugar and marg. Mix in oats and flour. Roll out to about 1/4 inch thick (0.5 cm or slightly more) and cut into rounds with pastry cutters.

    Bake on a greased tray in a preheated over for 30 mins at 350 deg f (don't know C equivalent, if you need it it should be easy to find online)

    Inspired by this thread i looked up some recipes on the internet and gave them a try - both came out beautifully and were really easy to cook.

    Greek Chicken and Potatoes

    serves 2-3 (add more chicken if for 4)
    2 chicken breasts - cut into 3 inch cubes (probably any chicken cuts would do)
    4 med potatos - cubed (i cut these about 1.5/2 inch cubes)
    3 cloves garlic minced
    1 chicken/veg stock cube in 1 cup water
    1/4 cup olive oil (but i forgot oil and it tasted good anyway)
    2 lemons - juiced
    2 teasp. oregano
    - Fry garlic gently in oil, then add chicken and cook for a couple of minutes (just enough to seal it)
    - add rest of ingredients
    - cook until potatoes and chicken are cooked

    Australian Damper

    3 cups SR flour
    3/4 teasp. salt
    3 oz butter/margarine
    1/2 cup milk and 1/2 cup water
    extra flour

    - put flour and salt in bowl and rub in butter with fingertips
    - Add milk and water. Mix with a knife in cutting motion.
    - then gather with hands and turn onto board and knead slightly
    - knead dough into round
    - put on greased tray
    - pat dough out into 15 cm circle, cut 2 slits in dough 1cm deep in cross
    - brush with milk and sift some flour over dough
    - bake hot oven for 10min or until brown then 15min on moderate
    Tastes a bit like scones and can be cut up and eaten like scones or as substitute for bread. I found it very easy to make.

    Nickynoo1, if you've not turned them all into biscuits oats can be used as toppings and coatings the same as breadcrumbs. They are one of the 14 'Superfoods' because they contain lots of things that are really good for you.

    I got this recipe from a magazine, it's great for using up left over uncooked food from full cooked breakfasts and Sunday lunch, I tried it last night and it was really nice:

    Sausage, bacon and cabbage bake

    Sausage
    bacon
    cabbage
    leek
    onion
    1/4 pint chicken stock
    1 tsp mustard
    Oil

    Chop up everything up into 1" cubes (cut the sausages into 4)
    Mix all the dry ingredients together and put in a casserole dish
    Mix the mustard into the chicken stock and pour over.
    Wrap in foil and bake at 160 (gas mark 4?)
    When the potatoes are softish (about 30 - 40 mins) take the foil off and spray on a bit of oil, turn the oven up to 200 (gas mark 6?) until browned (about 20 mins)

    It's really quick to prepare and only 1 pot to wash. You could probably do it in the slow cooker too.
    When life hands you a lemon, make sure you ask for tequilla and salt ;)

    I'm back onto my store cupboard/freezer clearance challenge - am I best off posting here or on the february challenge thread?

    its root vegetable curry tonight done in the slowcooker with rice. and it is fantastic. parsnip, swede and a couple of spuds with some sauce donated by neighbour. I chucked in a tin of (dented) toms to make it go a bit further and its fed three of us so far with about another couple of portions easily.

    this is what I have noticed about slo cooking stuff - it seems to go so much further as it doesnt reduce down (or burn!)

    I did vegetable chilli today in the slow cooker and added the rice for the last hour. Its great because it doesnt reduce down like you say and the rice soaks up any excess liquid.

    For your curry did you use curry paste, powder or something else?

    my neighbour made it and it had onions and garlic and tom paste in it plus what I presume to be garam massala and some form of coconut milk/cream with turmeric, coriander and I think she said cumin. she had made so much that she donated some to me cos shes nice like that :) its more of a tangy curry than I am used to - probably a bit srilankan or malaysian influenced. would have been great with lentils

    I'll see if she is prepared to share her secret recipe

    actually - someone here may know - we didnt know if it would freeze with the coconut stuff in it - any ideas folks?
