Brown onions in pan, and then add brocolli. Whisk eggs together and add a bit of milk if you fancy, add salt and pepper, pour mixture into pan and cook - brown under grill to do the top if you want. Sprinkle cheese on top and melt under grill until bubbling.0 -

Make savoury pancakes (normal pancakes without sugar) which will use up your eggs. Then stuff with chicken, broccoli and either cheese or a cheese sauce/cream sauce. That is what I'm making on Tuesday. I don't really celebrate Shrove Tuesday but we had roast chicken yesterday and broccoli was cheap at Aldi and I looked at the meal planning diary and saw pancakes and thought--easy!
I would steam the brocolli and cook the chicken before mixing with suace/cheese--I don't want to patronise but I know cooking isn't your strong point Mardatha!0 -

I have loads of plain and self raising flour in the cupboard. Is there anything I can use the plain flour for in a meal? I'm not that much of a baker - only bought it for pancake day.0

You could make yorkshire puddings :-)
140g plain flour
4 eggs
200ml milk
Sunflower oil for the tray
Heat oven to 230C/fan 210C/gas 8. Drizzle a little sunflower oil evenly into 2 x 4-hole Yorkshire pudding tins or a 12-hole non-stick muffin tin and place in the oven to heat through.
To make the batter, tip 140g plain flour into a bowl and beat in four eggs until smooth. Gradually add 200ml milk and carry on beating until the mix is completely lump-free. Season with salt and pepper. Pour the batter into a jug, then remove the hot tins from the oven. Carefully and evenly pour the batter into the holes. Place the tins back in the oven and leave undisturbed for 20-25 mins until the puddings have puffed up and browned. Serve immediately. You can now cool them and freeze for up to 1 month.

I haven't done it for a few years but I used to make my own spring rolls by filling pancakes with finely chopped/sliced stir fried veg (carrot, cabbage and onion) then brush with soy sauce and baked in the oven. I still do my own stir fry, and also use finely grated onion and carrot to stretch Mr T. Value coleslaw. This is very runny stuff with lots of dressing - you can literally triple the amount of chopped/grated veg and still have enough dressing.Erma Bombeck, American writer: "If I had my life to live over again...
