I would go for a sausage and bean casserole
Roast some veggies (carrot, onion, pepper) with the sausages until they brown a bit. Then add half a tin or more of tomatoes. Once all well copoked, add a tin of beans per two people and heat through.

Option one: pan fried sausages , add onion and the pepper till softened, serve with delcious green veg. You don't ned a carb, but you could serve with the rice if you want, personally, I would have more veg
. If you serve with the rice you might want to make a 'saucier' version, adding some of the tinned toms and some appropriate herbs.

What sausages have you got? any chance of making them into meatballs and doing a tomato sauce with them?
Whatever type will make a nice sausage casserole! Just lightly fry the sausages to brown them a bit and add to a casserole dish with a tin of tomatoes a tin of baked beans, dash of worcester sauce, and pepper. bake for about three quarters of an hour at gas 4. you can serve with rice if you like or pasta or mash! anything really!0 -

Apparently I am an actual idiot as I didn't think of sausage casserole at all, despite the fact it is something I make regularly! I couldn't get past thinking about roasting the sausages with peppers and onions and then couldn't figure out what else to do!

Hi, I'm new but have got a brilliant idea for using up bits and pieces whilst empytying your storecupboard. In a large bowl mix up the following: 1 very large potato - grated, 1 large onion - finely chopped, salt + pepper, large pinch of mixed herbs, large splash of Worcestershire sauce, 1 to 2 eggs - beaten, 1 small pack of streaky bacon - chopped + fried, grated cheese - large handful. Mix all together well. Fry large tablespoons in shallow oil on medium heat. Gorgeous with baked beans and salad. Hope you enjoy.

I got some lamb mince out of the freezer yesterday but couldn't be bothered to cook it, so had to use up today. Didn't fancy Shepherd's Pie so...
I chopped up 2 red onions (looking a bit peaky), gently fried in oil, then added some crushed garlic (4 cloves), dried cumin, and dried coriander. Once that had cooked for a couple of minutes I took half out, and added a tin of chopped tomatoes, seasoning and some sugar to the pan and simmered for about 10 mins. Then in a bowl i mixed up the pack of lamb mince (600g), some chopped up dried apricots, fresh breadcrumbs (the last two slices from a loaf I bought last weekend), a splash of worcestershire sauce, seasoning and the removed onion/garlic/spice mix.
I then rolled into about 22 balls, and fried these in a second pan. Once the balls were cooked I added them to the sauce mix. I served 5 balls each for two of us, with wholemeal pittas (from a packet which had been unopen in the bread bin for a couple of weeks), cous cous (Ainsley Harriot spice sensation bought on a multi-buy months ago), and some left-over rocket from a meal earlier in the week. Yummy! Although wish I'd used a bit more spice

Eat the sausage rolls and the apples....
Out of the onions, carrots, mushrooms and plum tomatoes you could make a tomato based pasta sauce, either eat it now or freeze it.
