    The best use of these depends on how much is in the pack, whether it's smoked, peppered or plain.

    Mackerel pate would make a good lunch with salad and bread, if it's a small pack of mackerel.

    Otherwise, you might be able to combine your mackerel and some of the sausages to make a dinner from James Martin's Mackerel and Sausagmeat Pasties served with carrot salad or braised carrots rather than watercress, and some roasted beetroot and horseradish if you have horseradish already. This also works as a good picnic lunch with potato salad.

    The Mackerel is a peppered one, not overly big but would do the pate for lunch idea.

    Tonight we will have the chickpea fries. I have just made the batter and it is in the fridge, I hope it sets in time. I will serve it with Salmon fillets that I have in the fridge and some potato salad. :)

    I can't tell how many people a 3kg beef joint might feed as it sounds huge but it might have bone/s in so although big, not masses and masses :)

    Roast beef would go nicely with your Yorkshire Puddings and other vegetables. (Delia's guide to roasting beef.)

    BBC has a good, standard range of recipes for roasting beef joints but they also have 2 good Madhur Jaffrey recipes for using leftover roast beef which make a nice change from Cottage Pie (mince some of the leftover roast beef although some people don't like 'twice-cooked food'). Beef jhal faraizi, karhai broccoli and sweet and sour squash (you can change the vegetable dishes to whatever suits your stocks as the beef works well with other dishes). Beef with onion and green pepper.

    tbh, I'd be tempted to put the scallops in during the last few minutes of cooking a fish chowder but that feels a bit wasteful.

    However, I've made Cottage Smallholder's Scallops, bacon and cod pie (I think I used hoki or River Cobbler instead of cod and I've also made this with tinned tomatoes instead of bechamel sauce) and it was a good, savoury dish. You might be able to use up some of your frozen soft cheese making the mash for this pie. Serve with stewed tomatoes or lightly braised cabbage.

    The chickpea fries are really nice and everyone liked them so they will feature again at some point. :T

    The kids won't be eating here until Sunday evening as they have decided to go to my parents for the weekend. :j

    I'm going to have a look at the other recipes you have posted now and start to decide what to cook when. The beef is a boneless topside. It cost quite a lot so I hope to get a few meals or lunches out of it.

    If the beef is topside, then it would benefit from long, slow cooking as well as usual roasting. Would you be able to cut the meat into 2 pieces to do any of the following?

    Roast beef with trimmings

    Braised beef in red wine

    Ragu alla Napoletana

    I wonder if anyone can help me - I'm having a mental block! Please feel free to add this to a different thread once I have some replies if need be...

    Basically, due to myself being stupid and using up ingredients at the weekend that I had bought for tomorrow's dinner (I got confused!) I can't make the meal I had planned for tomorrow. I don't want to go and spend any more money on food and I don't really want a freezer meal as Wednesday, Thursday, and Friday will all be freezer days!

    Anyway, I have got a pack of sausages out of the freezer, waiting for inspiration to strike. It has yet to do so...

    I have a green pepper that needs using up and I have lots of onions, both red and white, and also carrots and some green veg.

    I have rice and pasta (though would rather not use pasta as am having it later in the week) but no potatoes.

    I have lots of cans of chopped tomatoes and various different beans, and I have tomato sauces both hm (frozen) and in jars.

    So my question is, with all of the above available, what would you cooK? I definitely need to use the sausages and the green pepper. The rest is optional!

    Thanks in advance for ideas! I don't know why, I am usually a creative cook but I have a mental block today for some reason!

    fry the onions and green peppers and sausages, maybe some other veg too, add some toms and the beans, serve with bread or rice or pasta

    or dont add the beans and call it sausage casserole.

  • Big sausage casserole - with the sausage browned in the pan with the onions and peppers. Then the veg after parboiling. Then the toms, herbs and some seasoning. Then cook til veg all cooked through.

    What time shall I be round?
