    Thanks, sorry should have said we have had it boiled and then butter added and seasoned, which is ok....might try it with onion as someone suggested!

    Over the festive season I decided that I need to use the contents of the cupboards so I made a list of what I had, sorry I don't have it with me! But will try and remember and add to this post.

    My challenge is just to use up the contents so it shouldn't be that hard to stick to :rotfl: and I have started :j.


    2 lots of 1/2 bags of lentils / broth mix have been turned into dog food with some limp carrots.

    1/2 bag of gram flour became Onion Bhajis.

    A portion from one of the 4 boxes of coconut milk :o became beef curry

    Hi-Have made slow cooker(having dusted it down) rice pud today with a bit of risotto rice found at the bottom of a box ,also used up last of xmas cream,and used dried milk so hopefully will be yummy! Had falafel (from a packet)and pitta breads(long life)with remnants of salad,both from above box for lunch and tea is frozen sausages,eggs,toast,beans and fried onions-and won't be going out to be tempted to shop! I am constantly inspired by the ideas that people have on this site to save money-am determined not to fail in this task!

    Joined another challenge about using store cupboard ingredients! But today I have made a beef stew - the usual:
    Stewing steak browned in flour
    leeks, spuds, carrots, onions, oxo, paprika mixed herbs, in the slow cooker on high!

    Have some smoked haddock in freezer - anyone any ideas on what to do with it, other than poaching it in milk?

  • I was so good the night before last, the boys had turkey burgers made with half of the 49p reduced turkey mince and then we had meatloaf made from the rest and anything I could find in the fridge, which included leftover chilli and out of date venison pate. The burgers went down a treat and the meatloaf was very tasty served with rice and gravy.

    But it all went wrong yesterday.......having had the builders in for the last 2 months, I finally snapped and couldn't be bother to cook in my dust covered kitchen anymore, so I succumbed to a takeaway pizza!!!!!

    Smoked haddock screams out to be turned into kedgeree, many recipes out there but basically it's risotto with any smoked fish. Just put the fish in to the rice at the very end, it won't need long to cook. And you can add peas, sweetcorn, or any other veg you fancy, to make the meal healthier and tastier...

    Today we used up the single portions of curry, mince in tomato and basil sauce, and another mince and peppers meal, with Rice.
    The freezer is practically bare now.
    There is the remains of a fish pie, some prawns, peas, sweetcorn, sausage meat, mince, a few odd sausages, a couple of potato waffles, half a bag of chips, 4 baggettes and 6 finger rolls. Oh and icecubes!
    There is also a piece of cooked meat in tinfoil, of unknown discription and I have a funny feeling it might be 2009's Turkey!!!
    So I will have to think long and hard about my menu plans and become creative? with the stocks.
    Plenty packet soups, gravy mixes, and curry paste, etc but not much pasta, rice or potatoes to think of. Mmmm
    When I die I will know that I have lived, loved, mattered and made a difference, even if in a small way.

    Kedgeree and fish cakes - Someone else mentioned them on another thread so thank you! I shall nosey at both recipes and see what we have in store cupboars and what I dont have to buy for!

  • Salski - You could also make fish pie with it. Poach the haddock in milk and use said milk to make a white sauce. Add fish and anything else you fancy or have to use up to sauce (like peas, sweetcorn, prawns, hardboiled eggs, peppers, broccoli.) Then top with mash or better still cheesy mash and brown in the overn for 20 mins.

    Well I was engaged. Until we separated on 8th March :( Here's hoping that having a break will help us solve all our problems. Until then I'm a single mum on a tight budget :(
