    Hi All

    Does anyone have any idea what I can do with the following I have lots of? Ideally not a "gravy" dish as we're sick of them - that's all been living off lately.

    Mushrooms
    Onions
    Carrots
    slightly old peppers (red)
    blue cheese
    spuds which are a bit old lookinig by now....
    eggs

    Have a storecupboard full of things can add to them....

  • Chop mushrooms, onions and grate the carrots and chop the peppers, fry in a little oil
    Cook required amount of pasta shapes then add the above to it when cooked. Pour over a tin of toms and allow to coat the pasta and veggies and the juice reduce a lot
    Sounds off but its yummy. If you fancy the ematy version add a few sausages
    Mad Mum to 3 wonderful children, 2 foster kittens and 2 big fat cats that never made it to a new home!
    Aiming to loose 56 pounds this year. Total to date 44.5 pounds 12.5 to go. Slimming World Rocks!
  • frittata or diced potatoes fried with mushrooms and onion
  • Spanish Omelette, chop up, mix together in a bowl add whisked eggs. Put in an omelette pan, or frying pan until cooked!

    Make up a pizza base, and chuck it all onto a pizza.

    onions, mushrooms, peppers (and possibly even carrots) and stilton in risotto

    peppers stuff with rice, onions, carrots and mushrooms

    mushrooms baked with stilton

    Diet version of gratin dauphinoise: slice potatoes and onions thinly and layer into dish. pour over vegetable stock and bake.

    What about a quiche ( eggs mushrooms blue cheese, peppers) with some homemade potato wedges ?

    How about stuffed peppers and potato wedges
    Fry mushrooms, onions & carrot.
    Cut peppers in half or quarters and stuff the above mix on top. Cook in oven until peppers are done.
    Cut potatoes into wedges add a little oil and bake in the oven
    just before you take the peppers out add the blue cheese on top until it melts :)
    Goal - We want to be mortgages free :j

    i often make rice pud in the slow cooker , if ive got surplus milk, all i do is boil ANY type of rice ive got in water for a little bit to soften . then drain some of the liquid off . chuck it in the slow cooker add some milk and sugar . and thats it , cooking it a bit first cuts the slow cooker time by half . you have to keep checking and adding milk ( Or water) as it soaks it up while cooking , but it turns out lovely
