    I curried the chicken, peas and cabbage, that my son didnt eat the other day. (chucked the potatoes), with half an onion, half a pepper sauted, and added to "Chip shop Curry sauce" from bisto!! Lazy I know, but didnt want to waste the chicken. Enough Curry in a bowl for me to eat tomorrow lunch.
    I have some sausage meat, cooking bacon and small amount of mince in the freezer, so will have to think what I can use them with to make them interesting. Will have to also think about the lack of freezer space after moving here, and loosing the big chest freezer to DD, twin2.
    When I die I will know that I have lived, loved, mattered and made a difference, even if in a small way.

    Left over Mash - freeze for another day just adding a bit more butter and milk when you reheat.~Croquettes? Make fishcakes from tin tuna/salmon or slice of any fish? Potato cakes - chop finely small onion, any ham/bacon, grated cheese, parsley, frozen peas, sweetcorn - basically anything that could be thrown together to make a shape like fishcakes and roll in flour, egg then breadcrumbs - either shallow fry or spray with oil and bake. I made the bacon, onion and cheese ones a few weeks back served with salad and potatoe wedges - they were quite tasty.
    Just a thought do you remember in the late 70's early 80's I think there were potato cakes with beans in the middle. I suppose you make a half ball scoop out a bit add beans then 'fuse' another one on the top - dont know how that would work - not much to loss eh!

    Sorry for replying late back to this, but thanks very much for the info concerning dried milk powder for sauces. I gave it a go in and it turned out just fine - no problems at all. I'll definitely be doing that again - I don't know how many times I've popped to the shops for a pint of milk for a sauce and ended up spending further money.

    Re: leftover mash - I second the potato cakes idea. They're lovely with some bacon, spring onions and cheese in, then shaped and lightly fried or baked - mmm

    Magic thanks. We hate tuna but will do the bacon/onion/cheesey thing, will have that today. Re the dried milk, I can't just pop out to the shops cos the nearest one is miles away, this is how I use dried for things like sauces and custard :)
  • Too lazy to cook last night, so no mac and cheese instead it was a homemade lasagne out of the freezer. Still not in any frame of mind to cook, but having defrosted some turkey mince that was reduced to 49p, I must get my act together and make some burgers for the boys. I've also got some lamb mince which needs to be made into doner meat before it grows legs in the fridge.

    Succumbed to half price dishwasher tablets in Lidl today, I've now got a year and a halfs supply, the small budget I had for fresh stuff now got smaller.

    Been eating out of the freezer, but in my calculations I forgot all about NYE, so had to go to shop to get a few nibble things, veg milk etc - spent £38.44 :eek:. Hm lasagne from freezer tonight with a nice glass of white wine and some garlic bread. Just me back to work tomorrow so will cook up some pasta and take with me maybe mixed with a tin of tuna.
    Mama read so much about the dangers of drinking alcohol and eating chocolate that she immediately gave up reading.
  • We had a goose for New Year's Dinner - a special treat and one of my gifts to OH. We fed his family but it was 5.5kg and we still have leftovers!! So in my tiny slowcooker I've made some goose stock from the bones. The giblets were used for gravy a few days ago (shame I don't know a dog to give them to afterwards!) We have lots of shredded meat and skin left. So aside from stuff like goose, gravy and chips I'm going to use the stock to make risotto and add some meat near to the end of cooking time - all from storecupboard bits!

    Re Christmas pudding ice cream I love Jamie Oliver's take on it. ....Simply mix your leftover pud into a half eaten tub of good quality vanilla icecream - problem solved!!

    I've only ever made "storecupboard risotto" with leftover chicken before. I was a bit suspicious about the goose and cheese combo for the risotto, but it was GORGEOUS! I'm going to use the other half of the goose to make some tomorrow. I also have two massive jars of goose fat to use in roasties etc :)

    Leftover mash is also good for making fish pie or cottage/shepherds pie with! Even bubble and squeak or cornish pasties! :D But I have a soft spot for mash, especially OHs mash with cheese so it never makes it to leftovers! :rotfl:

    Well I was engaged. Until we separated on 8th March :( Here's hoping that having a break will help us solve all our problems. Until then I'm a single mum on a tight budget :(

    Had fish pie last night using pollock and some prawns from the freezer,tonight veg chilli using quorn mince,tinned toms,kidney beans,cocoa and stock all from freezer and cupboard along with chappatis(instead of tortillas, no one complained!) have one more box to sort through before the inventory is complete! Have bought dried milk to use in sauces and custard as i think it will save me so much on fresh milk :-D
