    2 large corn on the cob -
    send round in the microwave for one minute each and freeze.

    1 cucumber - AH?

    1 pack of 5 mini parsnips
    3 carrots
    3 large and 1 small leeks
    4 peppers
    10 cherry toms
    6 mushrooms
    Add a few potato wedges/halves
    Roasted veggies. You can cut the peppers into half/thirds and pop a couple of tomatoes and a few herbs in each

    Add the spring onions and the spinach at the end
    small ammount of baby spinach (no fresh enough to have raw)
    spring onions

    small bit of brocolli - cook to go with

    Need to have dinner tonight for 2and the rest needs to be made in to things I can freeze I suppose.

    roast the veggies with the sausages. make sure you eat all the sausage, mushrooms and spinach.

    Whazz the rest and you have roast veggie soup for the freezer.

    Blanch and freeze the spinach to put in spag bol/rissottos/minestrone, it goes so well!
    Have with a salad of cucumber ribbons (jamie o style, i swear cucumber tastes better like that!)

    2 diced carrots, 2 diced peppers, mushrooms, cherry toms, 1 leek + tin of toms to make a ratatouille to freeze. Do it so the veg still has a little bite so it defrosts to ratatouille, or cook it fully to get a delicious veggie pasta sauce.

    And of course soup :D Just google/bbc recipe search each vegetable and pick the recipe that most appeals to you!

    I haven't posted on this thread for a while, but my challenge isn't going too badly. I've now done a freezer inventory (which I should have done in the first place, of course :o) and have planned the next two weeks' of meals round it, after which I should be nearly done. I hope so, anyway, as I've just ordered a load of meat, intended to last me all winter, and I'm going to need somewhere to put it! :eek:

    Today I've used up the last of my HM potato croquettes (which weren't a great success, sadly) and a frozen plaice fillet.

    Amethyst_ice - your casserole looks yummy - thanks for posting the pic. I might have to try that next time I've got some sausages in the house. :)

  • Don't forget that most veg will keep in the fridge for much longer than you think - don't throw it out just because it's gone past the Best Before date. I have gone away for three weeks or more on occasion and have left behind veg in the fridge that I'd forgotten to take with me. There was the occasional rotting horror, but I was surprised to find most of it was quite usable when I got back.
    If we are supposed to be thin, why does chocolate exist?

    The tomatoes and spinach used with a bit of sauted onion (make that spring onions or leeks - as they come from the same family) as the basis of a sauce (with something like a bit of cream cheese/fromage frais) thrown in and served with pasta...

    Roast everything together in a large pan, except the cucumber and spinach. Have roasted veg as dinner tonight, and blitz everything left over, plus the spinach and peeled cucumber with some stock and freeze for soup. (I always see it as a challenge to use as few pots and pans as possible when cooking!)
    If I'm over the hill, where was the top?

    Aubergine, roasted pepper and leek Lasagne (was vv nice) served with a side of spinach

    Mushrooms with breakie (along with toms, scrambled eggs and toast)

    Most other things were popped in a stew on Sun
