I took my firt 'stock check' a couple of days ago as I'm joining in this too. OMG I was embarassed how much food we have in! There is far to much to list here!
Hoping to spend only £50 on food/toiletries etc this month as I have so much, but have already spent just under half of that on the first day of my shopping challenge...April 2021 Grocery Challenge 34.29 / 2500 -
I have only just come to this thread as a newbie to MSE. I have noticed that a few people are looking for recipes for quinoa, cous cous and the like. I found some great recipes for quinoa on the web. fatfree.com offers lots of recipes that are low in fat and are very healthy. As a recently diagnosed diabetic, I had to make big changes to my diet so browing the web for new recipes is something I do every so often.
btw I also found that you can substitute cous cous in a lot of the recipes too.
I am now setting myself the challenge of using up as much as I can in my cupboards and fridge/freezer before I get paid at the end of the month. I'm on holiday next week so won't need to make sandwiches for my lunch, which helps."Bad planning on your part does not constitute an emergency on my part."

speaking of quinoa I read this thread and decided to give the storecupboard challenge a go, I found some quinoa in the cupboard so cooked it up like rice, in a separate frypan fried some onion & garlic, threw in a tin of kidney beans, some chilli, & then a can of tomatoes, salt & pepper, cooked it about 10-15 mins, combined it with the quinoa, it was delicious and I got about four or five light meals out of it. Quinoa is very nice0

I think it's my turn to do a proper store cupboard challenge this month - They are bulging with stuff and money was a little tighter than planned (ok so my dad has actually solved that little problem BUT I want to do my store cupboard challenge this month anyway
)
So tonight when I get home after work and walking the dog I'll start listing EVERYTHING in the kitchen - freezer, cupboards and fridge - no-where will be safe!DFW Nerd #025DFW no more! Officially debt free 2017 - now joining the MFW's!

:wave:I have been lurking for a while but decided to join at the end of this month after the children go back to school as I have spent far too much money:eek:
One old stanby recipe which I will be resurrecting from my bedsit days was Tuna pasta.:)
Boil pasta and chopped potatoes together, wasn't big on washing up thenand in meantime fry chopped onion to your taste then add tuna. Drain pasta/potatoe well and then add those, frying for few more minutes. To make it more interesting you can add any herbs/spices in the cupboard. Thats it, simple and filling
Hope that helps someone!MFiT Member No 85

 I've taken stock and have managed to come up with a months worth of menus for me, hubby and 4 year old. Phew, it's frightening really. All I will need to buy is bread, milk and fresh fruit and veg! Let's hope we manage it!You can discover more about a person in an hour of play than in a year of conversation.

I really think I need to do a storecupboard challenge.
Today I tidied up the freezer in the garage, it's 14cubic foot one and chocka block full. There is so much food in there I'm embarrased to list it all. But with that and whats in the cupboard I think we could live like kings for at least 6 months. There is only me and hubby!!
I do menu plan for a week at a time, and buy all my vegies etc from Doncaster Market, but still feel a need to visit Mr T or Asda once a week.
So starting tomorrow instead of going to the supermarket I'm going swimming, and hope to loose body pounds instead of purse pounds!! Hope I can keep it up.0 -
I definitely need to have another go at the storecupboard challenge. I've got all sorts of things in the freezer and cupboard that haven't been used up! Next week I'm only going to buy fresh fruit/veg/yoghurt. My 'use up' list is as follows:
2 duck breasts (frozen individually)
3 chicken breasts (frozen individually)
4 portions of smoked salmon
Turkey breast
1 M&S fish thing
Squid
2 sausages
Red mullet
2 x BBQ meat things
1 M&S chicken thing
2 x turkey breasts
Whole mackerel
Whole rainbow trout
Random lump of meat (steak???)
Chicken thighs & drumsticks (for casserole)
Haricot beans (tin)
Cannellini beans (tin)
Borlotti beans (tin)
Butter beans x 2 (tins)
Mixed pulses (tin)
2 x tinned tomatoes
2 tins apricots
Tinned tuna
Very large tin of maple syrup
Raspberry vinegar
Lemon oil
Truffle oil (I never know what to do with it and don't want to waste it)
All the usual dried goods (flour, cornflour etc)
Good grief, I've got enough food to feed the Russian army. How on earth did all that food sneak in while I wasn't looking And there was me thinking that I needed to go to the supermarket as I don't have any food in......
The chicken thighs/drumsticks and apricots can go into a lovely casserole recipe I got from a colleague. Any bright ideas what to do with the rest? I need packed lunches & evening meals to feed one person. Perhaps a bean soup (or ten!) of some description?0 -
ive done great so far on the challenge ( if you go back to my original posting , youll see i didnt have much option this month )
had a run of good luck though on the food front................been given a glut of apples , and also kidney beans which have been turned into additions to meals , and surplus in the freezer.
dont know if anyone else adds stuff to mashed potatoe ......but thought id mention it , as its a nice " filler upper " with storcupboard stuff,
I "Collect" the satchets from eating places( like witherspoons )
eg. mint . tomatoe, brown sauce etc .....ideal for adding to "Stuff" . the horseradish sauce ,or the mustard ones are LOVELY mixed in mashed potatoe . and gives the meal a nice kick0
