    Just found a tin of Carnation Light at the back of my cupboard!!! I have a vague recollection of needing it for some kind of low fat Bannoffee (sp) pie, but not sure.

    Anyway suggestions would be great.

    Im a big fan of chocolate cake made with Carnation. Tastes fantastic and a big plus is its very easy to make. Here goes:

    7oz self raising flour
    8oz castor sugar
    3/4 teaspoon salt
    2 tablespoons cocoa
    4oz margarine
    2 eggs
    5 tablespoons carnation
    5 tablespoons water
    1 teaspoon vanilla essence


    Sift together flour, sugar, salt & cocoa.
    Rub in margarine.
    Stir in eggs, essence & liquids & beat well.

    Pour into a greased tin.

    Bake at 325o (160c) gas 3 for about an hour.

    How long can you have meat in the freezer before you have to throw it? This thread inspired me to root through my freezer and found chicken drumsticks, braised steak and chicken fillets with the date 'September 8th 05'. They were frozen straight after purchase and in a proper big freezer, what dya think? There about £10's worth of meat and I'm having palpitations at the thought of binning it!

    Ok ive done it, a week late, but ive finally got through everything!! Ended up doing overtime and not getting in till late for the past week and have already eaten some of the random ready done meals out the freezer.

    Freezer
    Ready done meals
    2 x 1 portion and 1 x 2 portion of some random stew ive done at some point!
    2 x individual oven pizzas
    2 x micro pizza - not very os i know but was given them
    2 x 2 portion of some random savory mince dish ive done
    1 portion of mince and camarge red rice (from my mums freezer so have NO idea about the content)
    1 x 2 portion of chilli con cane and rice
    2 x 2 portion of cottage pie

    Other Freezer things
    Joint of Gammon that will last a week
    3 x 1 portion Cauliflower cheese
    6 white pittas
    2 packets of 8 sausages
    frozen soya mince
    loads of frozen spinach
    8 vegie burgers
    huge portion of fillet steak - mum :)
    2 big packs of stewing steak
    big pack of mince (beef)
    3 packs of wafer thin ham!
    lemon slices (any lemons going off i slice up and bung in freezer for a fab G&T)
    tom and basil soup
    !!!! a leekie soup
    hot cross bun loaf
    loaf of home made bread
    and sooooo much ice cream (low fat of course) i think im going to be ill!

    then the store cupboard
    Soya Mince x2
    Chick peas, mixed beans, red lentils, yellow peas, green lentils, continental lentils (do you think someone over did the lentils!)
    Quinoa - and ideas for this PLEASE!!!!
    enough couscous to feed a 3rd world country
    jar of sizzle and stir tikka paste
    dired mushrooms
    red camarge rice - mum!
    risotto rice
    rice
    crystalised pinapple - suggestions again please!
    and then the obvious basics of tinned toms and herbs and spices and bread and baking stuff

    I really think i dont need to buy and food for the next 2 months, let alone just May considering i will still be having my green box delivered with fruit and veg. :eek:

    I think we will be living of risotto and mince dishes (can add anything to that!) for the next 2 weeks!

    Any suggestions for the Quinoa will be greatly appreiciated, and also the camarge rice. Also the pineapple (OH got a bit carried away and bought that!) Im going to go a search for some good lentil recipies, currys are always good for those and also bulking out mince dishes. But i always work on the principle any recipies or ideas are greatly recieved.

    I would have no problems eating it myself, as long as it was properly cooked and have done in the past to no ill effect. But Im no expert on this, just know what i would do in your situation!

    Aagh!

    Even on Storecupboard Challenge month, I can't seem to resist impulse buys!

    I'm 'allowed' to buy fresh fruit and veg, so I've gone and bought the following 'special offers' that I can't think what to do with....

    A giant celeriac (I will use some with spuds to make yummy mash, but it really is giant!!)

    Oyster mushrooms - need using up pretty soon, and I haven't a clue how they differ from the ordinary bung-em-in-a-spag-bol variety - any ideas?

    Mini turnips - I've tried using them for mash before, but they aren't as sweet as swede - does anyone have any good uses for them??

    Well we have eaten out of the freezer and cupboards this week and hardly seem to have made a dent in what was there originally. Total spends this week, fresh fruit and veg etc £4.26, 5 dozen eggs from costco £2.99.
    Money "saved " towards holiday spends approx £100 based on normal shop.
    After this month I intend doing the shopping challenge and getting that right down.
    So far so good.

    Today we will be having

    egg,bacon,sausage,tinned toms,

    leg of lamb,lots of veggies,redcurrant sauce etc (casserole in s/c tomorrow with leftovers)

    DD is also going to do some baking out of storecupboard 4 bags of flour to be used up.She wants to do fairy cakes,rockbuns,and a crumble for after tea.

    Same here - now beginning to wonder if we are going to manage well into June too without going 'food' shopping - quite scary to think how much food we keep here. Have managed to only buy fruit, milk and rolls (didnt need veg as we have that much in the freezer). We did go to Asda ysterday for ice cream as the kids have been asking all week for it and a day in the paddling pool wasnt quite right without the ice cream.
    Had a barbeque yesterday and are planning another one for today all with stuff from the freezer!

    I have found that i have been taking out say a joint of beef,and then putting back in, cooked slices of beef in gravy and maybe a casserole too. So it doesn't seem to be emptying at all.
    The problem is my freezer is full of joints,chicken,fish,cheese etc and these seem to morph into other things when I take them out,and end up going back into the freezer in greater quantities, only as ready made meals instead of ingredients.Then they come out again and are cooked and eaten and the leftovers turned into something else.I could be at this for a long time...:confused:
