Can I just ask you where you get your G/F pastry cases from? I've never seen them anywhere. I also have xanthan gum in my cupboards (for DS who has Coeliac disease as well as diabetes) although I think it is a bit out of date now but have to confess I have never used it. What do you use it for?
I too have coeliac. I think I got the cases in Sainsburys, they seem to have a better selection of GF stuff than Tesco. They come in a pack of 4 and are either wrapped in 2's or individually which is good.
I use a small amount of the xanthan in any baking as its a stabiliser and prevents everything falling apart. Just have to be careful not to use too much as otherwise everything turns out with the texture of crumpets. It is a big help with pastry, I just cant usually be bothered to make it. With my baking for me I tend to use a mix of Doves and Juvela flours as one has better properties and the other a better taste so together the balance is about right. Can adjust most standard cake recipes successfully this way.Mortgage, we're getting there with the end in sight £6587 07/23, otherwise free of the debt thanks to MSE help!0 -
I did a store check the other day and it's coming down nicely. I checked to see what we need for December and there's only a few items, although I like my store cupboard for the "just in case" I need to remember that I don't need loads of everything.
Today I'm using up whats left from last nights chicken for fajitas and then going to make stock in slow cooker overnight for soup for lunch tomorrow, don't need anything in as I got everything I need already. I have so far only bought a few bits for December still no big shop,but got one booked in for Christmas week.

I've had a hectic few days - Christmas starts here for me! Unfortunately the busyness, coupled with tummy bug, means my stores have barely been touched since Friday - I've used up one tin of tomatoes and .... that's it, actually.
Today hasn't helped, either - it was meant to be BBQ chicken for dinner tonight, but I forgot to get it out of the freezer and ended up buying some cheese and onion crispbakes to have instead.
My Storecupboard Challenge starts again tomorrow!!Back after a very long break!0 -
Finally got round to making sausage rolls for tea tonight. Took skin off whoopsied pork links, mixed with a pack of sage & red onion stuffing (bought in Lidl ages ago for pennies) which had been prepared with some boiled water. Let it cool at bit and using bought puff pastry made 8 good sized, well filled sausage rolls.
4 were frozen at that point and the others we cooked for tea tonight with chips and they were lovely :j.
I haven't eaten sausages for about 25 years-just don't like them but I thought I would give these a try and was pleasantly surprised and scoffed the lot
Also used up some bits and pieces from the cupboards to make cheesecake for later.

We're using up eggs tonight and the end of the loaf. Eggy bread for ds and scrambled for me probably. Made some chocolate blancmange last night so we'll finish that for pud. Going to have a lazy night tonight and have bacon & egg or cheese omelette whatever we feel like when we get home.
Still got loads of the cheesecake for pudding so will use up more of that before it goes off....
Think it might be a NSD today as resisted the impulse to get out of work for half an hour - it looks lovely outside - going to be a cold one tonight no doubt!!0 -
this week I've topped up the freezer (not that it needed it!!) with 4 portions of chilli. Have reomved 2 portions of soup though. Today I'm making a beef stew which will be tea tonight and pack-up for my night shifts tomorrow and sat. SOme of the ingredients I bought in for the purpose but from my stores I use a shwarz pepperd beef casserole mix, an oxo, some red wine (I always have a bottle open for cooking) and some slightly manky looking sweede/potatoes/celery from the bottom of the fridge.
I notice there are a few GF cooks posting on here. My ex was a coeliac and I found that if I used the sponge cake recipe on the doves farm flour pack with added xanthan gum it was VERY close to a 'normal' cake. I made it chocolate flavour, ca't remember if this was my own adaptation or if the recipe ws for choc.0 -
Last night's dinner used up one of my many packs of beef mince (I bought the mince as it was on special offer, so I've got lots!). That got turned into three portions of chilli con carne, two of which went straight back into the freezer. :rolleyes:
Tonight's dinner will probably be turkey casserole, from the freezer, as it's evening class night and I won't be home until late. It's one more thing out of the freezer, at least!
And I know it's a late response, but I love your idea of sausage and stuffing rolls, ellemm. I love sausage rolls, and that's definitely on my "must-try" list now!Back after a very long break!0 -
I have been lateshift this week, so have managed to use a few HM ready meals from the freezer... and I haven't been to the shop, so no replenishing either
I might see if I can keep it up over the weekend...0
