Cod Mornay with parsley buttered potatoes and veg
Grill or poach the cod (if poaching, add a dash of lemon and dill or parsley to the water - takes a minute or so to poach, or if under the grill, add a dob of butter and splash of lemon juice and salt and pepper, again a minute or so to poach)
Mornay sauce - make a basic white sauce out of the flour milk and butter. Add a dash of lemon juice, splash of white wine if available, salt and pepper, dab of mustard, parsley or chives or both and a good handful of cheese! You can make the sauce early in the day, and boil up the spuds sliced too.
Ask Mr Ting your chef (microwave) to warm up your spuds with a dot of butter and sprinkle of parsley on them, and also warm your sauce through, both as the fish is cooking. Add veg of your choice!

Alternatively, you could do marinated meat balls in sauce. To the mince add small quantity of finely chopped onion, plenty of herbs, garlic and ginger, lemon juice, fresh herbs. Leave over night. Tomorrow make a similar onion and tomato sauce and cook the meatballs in it. Have this with whatever you like, rice, pasta, cous cous etc.
mmmm this sounds yummy if i dont do it tomorrow I will def try out on the kids one time thanks for the suggestion.

This one also sounds delicious, god I am now going to have to make a decision haha I was going to prep things tonight as I have other things to get on with tomorrow as well which is why I want easy and quick recipes

Hope so, as Ive got one lurking in the back of my stores as well! Yeah of course its fine with chicken. I like to cut up chicken bits into bite size bits, stick them on a long skewer and griddle-pan. I did think ( if its the amoy one) it was slightly claggy- I added a drop of milk to thin it out slightly. I bought a few- i think they were a bargain:rolleyes:
Nothing to report at all this week , as we have hardly eaten anything! Tonight though Im doing a quorn mince chilli, using up some passatra out of the fridge, half a red onion, the rest of the dried onions, tin of Chopped toms, all the usual spices, some of the tortilla chips, rice, wraps, the lot- we need to eat!
Still havent got around to doing any baking ( is this a record) but must use up the coconut yog today, so will do the banana/yog/honey/grape nuts combo for dessert - YUM!

Right I have defrosted some mince and will go for the meatballs recipe, will let you know how it comes out.

But with a posh twist
6 or 8 bangers (depnding on size) - fry in a pan with a little butter, when close to done add 1 large or 2 small red onions sliced. when they have softened a little add nearly half a bottle of good red wine. Turn the heat to just simmering and leave it to reduce by at least half.
Serve with mash (made with butter and full fat milk and a little mustard) and maybe some carrot and broccoli

I am going to eat what is in the cupboards and nothing else for a week except.... I have two packets of cornflakes and no milk.
Is it cheating if I buy milk?

I don't think buying milk is cheating if you need it to use up what you've got already. Milk is one of the essentials I always replace when it runs out, regardless of how much other stuff I've got to use up.
Today I've used up the pack of turkey that I meant to turn into a pie mid-week - it's in the oven being casseroled at the moment, and it looks like I should end up with enough for three portions, two of which will go back into the freezer. I'm rather annoyed, though, as I hoped to have broccoli with my casserole, but it had obviously been in the fridge longer than I thought and was so furry it went straight in the bin. Naughty CCP - eat your greens!Back after a very long break!0 -
how about beef stew? assume you have onions carrots and a beef oxo cube? with mashed potato - you could do garlic mash. and a green veg? he may like dumplings too - my OH loves them.0

Thanks Tandraig, I thought of stew as well, and have all of the ingredients, a good way to use up veg that is on the way out as well as it all goes soft.
I have gone with the meatballs this time and I have even added garlic which I dont like but I have not put too much in...lolBeen here for a long time and don't often post
