    Managed to eat completely out of the freezer and cupboards yesterday and have meal planned for the rest of the week. Will make a big batch of Italian Vegetable Soup for DH lunches/freezer. Might chuck in some macaroni that has been hanging around for a while to make it more substantial and keep him away from the crisp machine at work. His waistline will thank me:D

    I had 6 tins of baked beans in the cupboard last week but now there is none left:mad: Now I know what DH has been living on when I have been away!

    Thanks to a change of plan for dinner last night I've managed to clear a bit more space in the freezer - on my meal plan it was meant to be veggie chow mein last night, but I don't really have any veggies suitable for stir frying (stir fried swede doesn't seem right, somehow :confused:).

    Instead I ended up with savoury mince and boulangerie potatoes (both from the freezer) with some roast parsnips, and followed it with a couple of mini apple lattice tarts (which turned out to be strawberry jam, not apple - a bit of a surprise, but tasty enough!).

    dawnylou - I hope you enjoy your curry. I love coconut-based curries - they're one of my stand-by, "can't think what to cook" meals (usually made with a blob of ready-made curry paste, though, I have to confess! :o).

    Sea bass for OH out of freezer for tonight (I am having chicken enchilladas, tomato/chicken mix ready just need to assemble and pop in oven)

    First go at making HM shortcrust pastry for an apple pie last night.....hmmm might stick to frozen pastry in future....:rotfl:however ....it will be eaten :D

    Also took out large portion of HM chicken stock and will make big pot of soup tonight.

    Bit of meal planning has shown me I really only need meat for about 3 meals to last until the end of my month so really going to try to stick to that which will also help my grocery challenge this month.

    I read somewhere that people are usually good at making either pastry or bread - it's down to the temperature of your hands, apparently.

    I can do pastry, but I definitely can't make bread by hand - before I got my breadmaker every attempt at a loaf of bread turned out something even the birds wouldn't eat (they were probably scared they wouldn't be able to fly after eating something so heavy :rolleyes:).

    I don't know if this is actually true, but it always made me feel better after producing yet another wheat-based brick. ;)

  • I have managed to use up lots more things in the last few days:

    Cupboard: Tin of Mushy peas, Small tin of beans, tin of carrots,
    Freezer: Pack of steam veg, some more of "oven chip mountain" :D,

    I made a stuffed pork tenderloin yesterday which was rather scrummy and for tonights tea, I have some spare ribs defrosting - I am now hunting through my recipe books for a good recipe for them.

    Half Shoulder of Lamb out of freezer for tonights tea.

    Didn't make the soup, was too tired.

    Took one bagel out of freezer today for my lunch (just one to go) and a tin of soup from cupboard - however put 4 whoopsied seeded rolls back in the freezer!!!!!

    Getting there slowly.

    Hopefully will be making a chutney tomorrow night - which will get rid of some of frozen fruit...can only make it if OH goes out as he hates the smell of boiling vinegar!

    Mashed swede will be fine - I've frozen mashed roots before and never had any problem. I'm not sure about the cabbage - I have a feeling it might go a bit mushy and watery when you defrost it. It would probably be OK if you wanted to use it in bubble and squeak, or something similar, but possibly not just served plain.
