  • Great thread,I have some ground rice and other than bakewell tart have no clue how to use.

    Make shortbread. Use 2 oz cornflour, 2oz icing sugar, 4 oz rice flour and 4oz softened butter.

    Rub the dry ingredients into the butter and then roll out. Use a cutter to make rounds and put on a baking sheet. Bake at 150 fan oven (lowish) until slightly golden.

    Taste divine warm. Don't use margarine though. The water content is too high and it doesn't quite taste the same either.

    Hi!

    I normally lurk on the Old Style board, but post regularly on DFW and others. I have been reading through the threads on Storecupboard Challenges and using up leftovers. I think I want to start with using up some of the stuff from my baking cupboard, but haven't baked anything in years so rather at a loss as to where to start. Hoped if I posted my inventory I'd get some pointers? :D

    Wholemeal spelt flour
    Strong white flour
    Wheatgerm (needs eating)
    Fruit muesli
    Nut muesli (needs eating)

    White sugar
    Demerara sugar
    Splenda sweetener
    Xylitol sweetener

    Chopped mixed nuts (need eating)
    Linseeds
    Desiccated coconut
    Raisins
    Unsulphured dried apricots (need eating)
    Lazy 'fresh' ginger

    Strawberry jelly x 2
    Apricot jam (needs eating)
    Blackcurrant jam (needs eating)
    Cocoa powder
    Powdered milk

    Vanilla essence
    Baking powder (very out of date!)
    Bicarbonate of soda (very out of date!)
    Dried yeast

    Lemons x 3 (need eating)
    A whole pineapple
    Unripe red pears.

    I also have twelve eggs, plus two cartons of cottage cheese with pineapple, but very little butter.
    :confused:If I am going to bake I'd like the first recipe to be something quick and foolproof to motivate me. Also reasonably healthy, so not too heavy on the sugar, white flour or butter - am I asking too much?! :o I own two decent non-stick loaf tins, two square silicone cake trays and a stick blender (Bamix).

    Please could anyone suggest a couple of easy recipes (just names and what it would use up) to get me started? Thanks in advance

    Try a lemon fatless sponge - add finely grated lemon zest to the mix, and possible make an icing from the juice ;)

    You could then make some bread or rolls.

    I'll add this to the Storecupboard Challenge thread later :D

    Thanks! That fatless cake recipe looks straightforward. Can I make cakes with either brown flour or strong white flour? :confused: The strong flour and yeast were purchased to make pizza dough (Mr. Fire Fox is a chef but does not really like cooking at home).

    You could try the brown flour and some baking powder - I'd use twice the recommended dose (as the flour will need it and it may have lost its oomph ;) ). It may be quite heavy, though. I think I'd get some butter and make a cake that way :D

    Your mueslis, nuts, seeds, coconut and dried fruit are screaming 'flapjacks!'. Just use muesli in place of oats and add the other ingredients at will;)

    I had pondered flapjacks but not thought of putting coconut in, yummy! :T Looks like I need butter then (suspected I might!). I have also found a carrot cake recipe that calls for half brown and half strong flour, which is perfect. Thanks very much everyone, keep them coming!

    FLAPJACKS

    125g margarine
    125g brown sugar
    250g rolled oats - your muesli
    75g golden syrup

    melt margarine, sugar and golden syrup, stir in muesli, turn out onto 20cm greased tin, bake at gas mark 4 or 180 c for 25 mins, cool and cut into squares.
