just chop and freeze and they will be fine0

I peel chop small and put into plastic takeaway boxes and freeze no problems at all The its a case of chip off a chunk to use as and when.I usually do several at a time so at the moment I have four boxes of white onions chopped and ready for use and a box of red onions also.I like to keep my eyes peeled for them when they are on special offer or discounted in the shops as I use quite a few in cooking.When Aldi have their offers it worth getting a bag or two and sitting peeling and chopping .I think the supermarkets sell ready diced onions but they are a quid a bag ,probably not even two onions in a bag ,very expensive way to buy them when they are so easy to do at home yourself I think, but then I am a fairly frugal person and like to think most things supermarkets do I can replicate at at least half if not a quarter of the price

Thanks JackieO. I saw a big bag of onions in Lidl for 1.50 but didn't buy them for fear they would go off. I'll go back today and get some.0

Just thought i would mention onions will keep for several weeks if you have somewhere cool and dark to store them (like my garage). Check them regularly and use any that start to go softer. I bring them into the house a couple at a time when I need to use them.0

I buy onions in the sack and I sit and put them through the foodprocessor to slice, and freeze, it does away with stinky hands everytime I cook, stinky chopping boards and bestest of all saves time when preparing a meal on the hoof. I also do the same with carrots, leeks, suede and parsnips. So easy to do when I'm on a roll. I also buy tomato's when on bargain price too and I slice them in half brush with a little olive oil, sprinkle on seasalt and ground black pepper and leave in my gas oven on the lowest setting possible until dried I then pack them in jars with olive oil to use instead of sundried tomato's. This is when I miss my Aga:( I must admit I found some spare oven shelves that fit my oven and I fill my oven right up with tomato's, apple slices and left over egg whites (from baking) made into meringues. I am lucky enough to have a decent sized OS pantry which I use to capacity and also a big freezer for veg, fruit puree, diced fruit and meat packs. It saves me a fortune0

I tend to roast some of them off when I'm doing a roast dinner. I can fill a tray and it doesn't cost anymore than the roast. They're good to make onion gravy and add to soups and stews. I just chuck them in the blender with some water/stock/tomato juice and add them. They freeze fine too but do wait till defrosted before blending/processing them.
I could make it better myself at home. All I need is a small aubergine...

I've sliced onions then frozen them in large freezer bags. Don't pack them in tightly or you won't be able to remove just what you need.
Another thing I do is fry onions up in big batches - until soft and translucent not coloured - then freeze the results in 1 cup portions, roughly equivalent to 2 onions. This takes up less freezer space.
Note: correctly stored fresh onions can be kept for weeks/months without spoiling. They need to be kept in a cool, dry place with plenty of airflow."Be the type of woman that when you get out of bed in the morning, the devil says 'Oh crap. She's up.'

I know someone who fries a whole load of them at once, slowly, until very golden and caramelised, then freezes them in small quantities to add to stews, curries, pasta sauces etc. He says the flavour is amazing. I'm too disorganised to do that though!0

I'm in the same predicament. I can't resist a bargain so have 15 Kilos to use up!!!
I made French onion soup last night and had some for dinner:
Tomorrow I am making a kidney bean curry (rajmah) as kidney beans are only 18p in Tesco at the moment and it uses up more onions.:A Every moment is a gift. That's why we call it the present.!:A
