Can see MrsChaos if offline, so thought I'd post these for her.

These were in American cup measurements, so I looked up the equivalent weights for each of the dried ingredients on a conversion website (each ingredient isn’t the same for some reason – I suppose because it is volume, so allows for gaps). Having tried both recipes, they seem to work.

    Banana Bread

2 cups (10 oz) Plain flour
    ½ cup (4 oz) Butter
1 cup (6 oz) Sugar (I used just ordinary granulated)
½ tsp Bicarbonate of Soda (Baking Soda)
    2 Eggs, beaten
    ½ tsp Salt
    ½ tsp Baking Powder
    3 mashed bananas
½ cup (1 ¾ oz) Raisins – you could substitute chopped nuts if you prefer
    • Preheat the oven to Gas Mark 4
    • Grease and line a loaf tin.
    • Cream the butter and the sugar together.
    • Carefully stir in the eggs.
    • Add in the 3 mashed bananas until combined.
    • Mix the rest of the dried ingredients and add to the wet ingredients before folding in the raisins so that they are evenly dispersed.
    • Pour into the lined tin and then bake for 45-60 minutes until evenly brown on top.
    Banana & Date Flapjacks

    3 large bananas, mashed
1 cup (6 oz) chopped dates
2 cups (6 oz) oats (I used normal porridge oats rather than rolled oats)
1/3 cup (5 tbsp + 1 tsp) cooking oil (I used sunflower oil, but it could be vegetable I suppose – olive oil would probably be too strong a flavour)
    1 tsp vanilla extract
    • Preheat the oven to Gas Mark 4
    • Mix all of the ingredients together then leave to set for 15 minutes.
    • Drop teaspoonfuls onto an ungreased baking tray then bake for 20 minutes.
Enjoy the little things, for one day you may look back and realize they were the big things.

    Off i go........
  • pollybear - what a shock that must have been for your daughter. His family must be devastated. Prayers heading their way.

Went on a hack this morning with DS1. All 8 of us stopped on top of a hill in the woods at 11 o'clock. The horses were so good & just stood patiently - unfortunately my hay fever got the better of me & I ruined the silence with a sneeze.:o When we moved off Minty decided he wanted to kick Hugo so normal chaos was quickly resumed:D
Now off out to a bbq bonfire!! Well at least the rain has stopped.
Have done some flying inbetween - off to find & update my list. Will do some more later.

    afternoon all

pollybear - condolences to your DD and all of you. what a shock.

Missed the bus in the end but got the next one and got to church a couple of mins late but as it was full I just slipped in at the back! I wasn't the latest anyway.

Picked up a couple of bits in town from holland and barrett, had lunch with DH then more shopping - had a big rant at the manager of the local s@insburys as the deli counter was shut with a sign saying 'back at 2.15' which was 15 mins away, and i was just popping in so wouldn't still be around. There were loads of staff around (mostly just standing around doing nothing as usual) and yet apparently none of them could work on the deli. I told her it was an appallingly managed shop and that I'd be complaining to head office (which I will!). I came home with steam coming out of my ears and will now have to go to M&S tomorrow on the way home for the bits I needed.:mad::mad:

It must be the day for it, I also had to ask the staff in St@rbucks to chuck out some teenagers who were just sitting around being loud and hadn't bought any drinks!! Felt a bit mean but it was busy and it's not a community centre!!

right, I need to go and put the wm on and put out prawns and peas to defrost for risotto later.

boddy - nice to have an admirer even if you don't reciprocate.
Mum to gorgeous baby boy born Sept 2010:j
