  • Well my xmas dinner isn't that massive due to their being only 3 of us but i do like to make a fuss!

    Starter
    Butternut Squash and Chilli Soup -With warm bread roll

    Main
    Roast Leg of Lamb (I get it from a local farmer)
    Mash Potatoes (using my faithful potato ricer)
    Roast Potatoes
    Yorkshire Puddings
    Tenderstem Broccolli
    Honey glazed carrots

    Pudding
    Some type of sponge cake from our farmers market
    Custard

    Or if we can't get one it will be home made chocolate cheesecake.

    Xmas eve is a buffet and xmas evening we travel to my parents so i'm off cooking duty then! :j

    SPROUT GRATIN (4-6)

    1lb Cooked Sprouts
    3 No Cooked Leeks (sliced)
    4 No Rashers Bacon (cooked & cut into strips) - or Ham if no bacon?
    400ml Double Cream
    3 Tbsp Parmesan Cheese (freshly grated)
    Salt, Pepper, pinch Nutmeg
    Handful Breadcrumbs
    Handful Pine Nuts

    Preheat oven to Gas 6 or equivalent - Put double cream into large frying pan or similar, heat until just bubbling, then add most of the parmesan and seasonings. Next add the bacon, sprouts and leeks until coated, then pour into a large ovenproof dish. Top with breadcrumbs mixed with remaining parmesan, then scatter pine nuts.

    I cook mine for around 30mins, or until the breadcrumbs are crispy and brown.

    been reading the listings - wow there's some fab menues out there !!

    my dinner is for 2 - me and O/H, and will have about 1

    starter
    lobster on our winter salad leaves from the greenhouse
    (lidl frozen 4.99) one shared not one each !! O/H not keen on shellfish

    main

    either (not made decision yet) Rib of Beef or Wild Duck & berry sauce (both available at local butchers)
    roast pots in goose fat
    roast carrot, squashs and parsnips (foil covered with nutmeg, butter and olive oil)
    purple sprouting (from dad-in-law's garden)
    cabbage of some sort (red or savoy)
    yorkshire puds with whichever !

    dessert

    homemade baked cheesecake with ginger and mandarins

    later in day. . .
    cheese and biscs
    mince pies my mum made (with home made very boozy mincemeat!)
    with clotted cream....

    then retire to sofa with big belly rofl. . .

    Boxing Day i go to my sisters for ham egg and chips :)

    New Year off to mum's and her partners for a big buffet - she lives in sheltered housing and she is organisng a buffet in their community room, as last year she was suprised that many of the old dears spent the day alone .....

    thats is :) most of the main meal is in the oven, and the other veg will go in the steamer

  • What is everyone making for their Christmas dinner? I've spent the evening looking through recipes on the internet and I still haven't decided. I'm definitely going to use Jamie's Oliver turkey recipe but have no idea what to have for the other courses.
    We're having a banquet with another family. We're going to theirs, and everyone is providing a plate of what they like. Then those that want turkey can have it and those that don't won't...
    Last year, and prolly this year too, our main course was butternut squash tartlets.
    You roast a butternut squash in the microwave with a long pointed sweet red pepper (capsicum) in a dish greased with the oil from a jar of sundried tomatoes, and some rosemary. You make buttery short pastry and bake blind, fill tartlet cases with the roasted bn squash mix and slices of brie or camembert. Bake till cheese melted.. *Heaven* I ate 4.

    Chocolate covered fruit to follow-I posted the recipie on the sweetie making forum. Pink cava to drink * ooooh*
  • suzysf that is lovely what your mum does with a buffet for other residents!
    i have hubby and i,and ds and dd then i invite my parents for dinner, i cook the veg and my mum cooks the meat, its normally chicken as we tend not to go overboard! we normally have prawn cocktail for starter but im thinking of parma ham and melon with french stick this year. i love all the festivities!

    We're not having a starter, I considered it but people struggle to eat my main course so I don't think there's any point! I to go overboard as I love to cook and love food. Last year I had about 9 veg dishes alongside the 3 meats (plates struggled) so trying hard to tone it down this year! A lot will be cooked in advance and frozen so I can spend more time with the kids on the day, and also I'll be 8 months pregnant lol!
    Only problem is we have a really small oven this year... timing is going to be hell!

    Christmas Dinner
    Meat - (all will be cooked the day before, then reheated in gravy or served cold)
    Beef joint (topside, currently better than half price in tesco - cost me £9)
    Duck (bought in Tesco when it was half price at £8)
    Gammon (tesco again, £10)

    Veg and sides -
    Roast potatoes (will start cooking these soon, going to freeze when just browned then cook from frozen on the day - Aunt Bessie eat your heart out!)
    Roast parsnips, glazed with honey and rosemary (again will prob cook and freeze soon)
    Roasted sweet potato
    Leeks in cheese sauce (expect I can cook and freeze this too?)
    Carrot and onions (this is cooked on hob, caramalise onions then add tinned carrots, sugar and cinnamon - cheap, quick and easy, tastes amazing!)
    Sprouts (a token effort, so not many of these, one year I did a lovely sprout stir-fried thing with walnuts but still didn't appeal to the sprout haters!)
    Red cabbage (got to have colour!)
    Swede mash
    will try to keep it to that for the veg...

    Yorkshire puddings (I make and freeze these Aunt B style too)
    Sausages in bacon (my Mum's doing these, even though she's veggie!)
    Stuffing (will probably make and part cook in balls then freeze)


    Dessert

    Baileys Tiramasu (Nigella)
    Xmas pud (Lidl)
    Mince Pies (H/M - warm with cream...)


    Guess I'd better start cooking now lol

    stuffing

    Meat = Organic water buffalo (I kid you not, we get it from a local farm and it is amazing) cooked in the slow cooker

    Veggie – Quorn roast marinated in cranberry and port

    Puds

    Berry pavlova (Nigella)
    Chocolate cake (waitrose)
      To those who are given much, much is expected

            Just creeping in and pinching some inspiration!

            There's only 3 of us so I can afford to go a little bit OTT but both my mum and OH are fussy in very different ways! OH likes things a bit different (will add chilli to everything he goes near :rolleyes:), Mum likes plainer, more traditional foods. Hmm. So it will either be several different dishes to please everyone or I'll make what I like and they can like it or lump it! :rotfl:

            After a couple of years of experimenting with different meats (duck and gammon) I'm going to go back to tradition and do a turkey. This will be the first one I've ever done so am on the look out for idiot proof roast turkey if anyone has any thoughts?!
