    Anyone know where I can buy tasty coconut ice cream as i'd like to make balls of it covered in white choc to look like snowballs!!

    Also thinking of doing a sorbet to lighten things up, perhaps Apple, Orange or Lychee.... as you can see haven't given much thought to any other courses yet!!

    CJ your menu looks fab! can i just ask what are Thai-style sweet chilli prawn shots? are they served in a shot glass??

  • I only have me, dp and our 2 kiddies(8+2) for xmas dinner (YAY!!)

    we usually have lamb but this year we are just gonna have chicken breasts (DS doesn eat meat so he will have fish fingers) stuffed with cheese wrapped in bacon yadda yadda
    Carrots
    Peas
    Greans
    Sweed
    Roast spuds
    roast parsnips
    Yorkshire puddings (dont care that we are not having beef, we love yorkies)
    sauces
    Best ever gravey
    maybe some sausages wrapped in bacon.

    We never have 3 courses or even dessert with xmas dinner, we open presents after dinner and I cook it for about 12ish so that my day is done early and I cna veg with the kids.

    for breakfast on xmas morning we have the usual ceral, I insist on that for the kids as they are probably goign to have a tea of chocolate on xmas day lol.

    Tea is cheese and crackers or gammon and pickles and the trend continues over the next week but with regular roast dinners appearing every other day lol.
    I smile because I have no idea what is going on!

    Yes, the Thai prawn shots are served in shot glasses.

    Peel (remove head and tail) and de-vein 12 large raw prawns. Wash and dry. Lay the prawns on a baking sheet and drizzle with a little olive oil. Season, then cook under a hot grill for 3-4 mins, until the prawns are just opaque. In a bowl, mix together 1/2 tsp sugar, 3 tbs thai fish sauce, 4 tbs sweet chilli sauce, juice 2 limes, 1 finely-chopped fresh red chilli, 1 tbs chopped fresh coriander and 1 tbs chopped fresh mint.

    Put a prawn in each shot glass and drizzle over a large teaspoon of the sauce.

    I'm sure I've bought coconut ice cream from Waitrose before, but I've checked their website and they don't seem to stock it at the moment - maybe they only have it in the summer time.

    I think I'd be tempted to buy a really good quality vanilla ice cream, let it soften slightly, then beat into it a carton of coconut cream (the small cartons of the stuff which is the consistency of thick double cream, not the tinned coconut milk which is too thin, or the sachets which are like candle wax and too hard .... I think it's made by Pataks), and a handful of desiccated coconut, possibly a squeeze of fresh lime juice too. Mix well and pile back into the original carton and re-freeze it. That might work :)

    At my house we have a big cooked breakfast christmas morning so dont have our christmas diner till around 4/5pm. plus all the chocolate that gets scranned. We have a turkey crown, peas, carrots, roasties, mash, roast parsnips, pigs in blankets, stuffing and sprouts for those who want them (just mum and sis) then for pudding we have triffle and chocolate fudge yule log with cream (my favourite yum yum)

    We're having quite a game-y Christmas lunch - it just happened that way! Neither of us are turkey fans, and the OH insists of something bird-y. Also, there's just two of us.

    To Start - Venison terrine with fresh home-made bread and apple chutney

    Main - Mini 3-Bird Game Roast (I'm hoping this will be two quail stuffed with pigeon breast all wrapped up inside a pheasant.
    Plus braised red cabbage, roast spuds and pigs in boar blankets (using wild boar bacon).

    Then we'll have a cheeseboard and a nice Yule log from somewhere as neither of like Christmas pud or Christmas cake.

    I'm still not sure whether to do a nice fruit salad for brekkie, in advance of all this filthy-richness, or stick with our favourite; scrambled duck egss and smoked salmon on toasted brioche.

    Oooh, porlock - I like the sound of that bread and apple chutney to go with the venison terrine. Do you have a recipe you could let me have? Mister CJ is partial to a spot of game, and that chutney sounds a delicious accompaniment. Thanks :)
