Cupcake & Natu, I also love making cakes, and have recently been making different cupcake recipes. Most use plain flour, and seem to come out very dense. I tried a muffin mix by Delia, but even that used plain flour, and wasn't anything like the light muffins you can buy (I used raspberries instead of blueberries). Any suggestions? Should I just substitute self-raising, despite what the recipe says? I have done the Magnolia bakery vanilla cupcake recipe, and despite being also dense, it was a big hit with the children. What recipes are you using? BTW, I don't eat them either, I make them for the kids' lunches.

Hmm, well normally a muffin recipe with plain flour should also include a tsp or two of baking powder, is that the case with Delia's recipe? The baking powder helps to make them nice and light and fluffy. You could always give it a try with self-raising flour too, but you wouldn't need the baking powder if you used that. Also, the most important thing with muffins is NOT to overmix the batter! This can make them dense and tough (although still tasty, i might add!). I would always do mix by hand (not electric mixer) and make sure there are still streaks of flour visible. Hope that helps :)

  • well done rosie!!

all this talk of swimming costumes - the thought of putting one of those things on full s me with horror - I don't want to look at that and I'm certainly not going to make others look at it!

I really admire all of you with the bottle to wear one - even when, looking back at myslef I was in really good shape, the thought of it still terrified me. I think it's because when my dad had the newsagents i used to read ALL the magazines every week so i was looking at way too many of those 'haha how fat are they!' articles in the womens mags. and if charlotte church is described as looking porky in em, then i'll never stand a chance. And it's soooo silly, because I bet no- one is looking at anyone else on the beach in that kind of judgemental way - we're all far too busy judging ourselves.

Vixstar - matalan is good if you want an appropriate swimming costume for exercise. When i first started going to aqua aerobics (where i used to live) i wore a tankini...boobs nearly flew out and shorts kept trying to work their way down to my ankles!

ROFL You girls need bigger friends :rotfl:I go to aqua aerobics with 2 girls who are a bit bigger than me and one who's a bit smaller. Don't feel so self conscious being the piggy in the middle :rotfl:

  • Well done Rosie - that's what I call a result!!! :T Go on & push the boat out - you deserve it!!! :D:D:D:D:D:D:D:D:D:D:D:D

And mirry - day 3 and counting?? keep it up, it will eventually become second nature to you so you won't need to think about it so much. How was your cauliflower mash last night? Did you use butter?? I might try it with my Sunday dinner since I dont have the roast tatties any more.

I fell off the wagon a bit last night cos I was out till late timekeeping a time trial (swimming), "Hank Marvin" when I got back in so had a peanut butter sandwich & cup of tea with milk (shock! horror!). I've been good otherwise and the scales this morning were showing a loss, so hopefully not too much damage done. I s'pose if I was doing that every day then I'd have a problem, so once in a while wont hurt. will it?

I cant remember that last time I wore a bikini (pre-kids probably!) and tankinis tend to ride up over my belly, but if you find the right cut & shape a one-piece can look very sexy! Last year I bought one with a skirt that looked great when it was dry but as soon as I got in the water the skirt floated up around my waist then clung like b****ry when I got out - not the most flattering of garments!! The last couple of holidays we've had in the sun I've looked around at some of the bodies on the beach & I can count on the fingers of one hand the number that have made me even a little bit envious or come even close to being a "beach babe", so there's no need for anyone to feel at all self-conscious, its just great to be able to get some sun on your body IMHO, who cares about the rest?

Had a phone call yesterday, MIL has gone back into hospital, something to do with a blood clot so they're keeping her in bed for a few days. OH is planning to go and see her tomorrow, but this bit of news is bringing him down. So far he's been very positive through it all but today he's been despondent and cant shake it, which is just not like him. I'm doing my best to gee him up but I cant help thinking the worst myself and I'm finding it hard to say the right thing or things that dont sound like platitudes. All along its been 2 steps forward 1 step back for her and she is very determined to beat this thing, so I'm trying to hold onto that.
