mhagster,
Actually, rather than write it all out, what I did was combine Jane Grigson's lemon curd ingredients from her 'Fruit Book':
2 large lemons
90g (3oz/6tbs) butter cut in bits
175g (6oz/ 3/4 cup) sugar
3 large eggs beaten
with the method from this website:
http://www.cookuk.co.uk/jams/homemade-lemon-curd.htm
works a treat and made 2 8oz little jars of curd plus some good sized helpings for the obligatory tasting!
Make sure you have the right size of heatproof bowl for your slow cooker. With 10 lemons you might have to make a few batches. Looking at the website recipe, they use 3 lemons (to what I would guess would be the equivalent of 3 eggs) which might work out better for you than the Grigson one, unless you keep chickens and are awash with eggs as well as lemons.
Alternatively it might work just making the curd in a large heatproof dish in a stock pot on the stove. I'm not sure. I've only ever made small batches before and I'm not sure how long they'd keep either. (Lemon curd 'use by' dates are pointless in our house because we all adore the stuff!)

Morning
Pleasures for yesterday:
1. Lift to work off a neighbour and I walked home so no transport costs today
2. Remembered to take lunch to work with me today so no spending at lunch time. DD and OH also took lunches with them so very good all round
3. Used more stuff from the freezer for dinner. Will get it empty and defrosted eventually
4. Chats with Mum and Brother on phone
5. Checked Credit card balance as have been some quite big purchases this month and it is not as high as expected so should be able to pay out of normal account and not touch any of the savings :j
Hugs to all who need them0 -
broomstick thankyou very much, will give it a go. These lemons were given to me by a friend off her tree a few weeks ago. However I'm the only one who loves lemons! Might make lemonade as well! I mustn't waste them.
1.Blooming freezing today! With an icy cold wind. Lots of snow on the Victorian Alps in time for winter season opening this weekend! However.....the pleasure, I stayed dry, missing the heavy showers & not needing to use heating throughout day!
2.Seriously busy day at work, however, it's good to thrive on the biz. Certainly earned my wages!
3.Picked up big 2 enroute home......the delight on my daughters face when she realises she doesn't have to walk the hills home! Long legged son was nearly home but still grabbed a lift!
4.DD2 had her last cooking class & made a lovely Calzone pizza and also brought her leftover dough home.....so nabbed that (she wanted to play with it!) and told her she can make a piza tomorrow night. I didn't have to do any driving, 2 other mums picked up & dropped off!
5.Easy peasy tea for the rest of us, curry & rice! Smells lovely!
6. Had a bath!
7. tonight my internet is behaving itself and I finally got to watch Casualty!
Have a good day xx0 -
My 5 pleasures today:
1 - Adding porridge oats to my spag bol for the first time to squeeze a few extra portions out of it (sssshhhhh, don't tell the family!!!)
2 - Making chicken stock in the slow cooker, the house smells lush
3 - "Beating" the box of washing powder - 30 washes done and still plenty left!!!
4 - Having enough rubber chicken left to make OH's rolls for his piece this morning :-)
5 - Doing the hokey cokey with the washing in between showers of rain instead of just chucking it in the tumble like in the bad old days ;-)Feeding 2 adults and 5 piglets aged 7 months, 7, 8, 10 & 13. Thank heaven for Aldi!:rotfl:

3. Had a fabulous chat with a lovely friend before going into the office and opened up about some of my fears and anxieties
4. Planned a lunch date with a lovely work friend who is moving back to the US in a couple of weeksand
5. DD and I went over to OH's and had a fabulous afternoon with him, sillly man forgot that he was supposed to be coming over for a sleepover tonight but joy of joys, will be round for 3 from tomorrow night!!
Headache really killing me so I think an early night is in order0 -
Evening all.
Well, I've found out why I've been feeling so tired and run down - I've caught a cold, and have been coughing and snuffling in a most undignified manner all day.
Snuffles aside:
1) Got an email from a head of another department thanking me for spotting a problem with an issue we argued over: it's a bit complicated but the email was basically an acknowledgement that I was right to be worried in the first place.
2) Lovely cuddles from my mog.(My mog's black, but otherwise it's just like that.
)
3) Managing to rescue one of my weeny tomato plants which had been blown out of its pot by the strong winds.
4) No more work this week, or next week. :j:D
A fifth pleasure eludes me, so I'll take my pathetic snuffling elsewhere and hope I feel better tomorrow.Back after a very long break!0 -
CCP hope you feel better soon
My 5
1. Walked into town with hubby
2. Marked 3 dissertations - one made me laugh out loud - in the library :rotfl:
3. Went to costa with one - which was quieter on the whole than the library (not including me laughing)
4. Son got on OK at his maths tutoring
5. HM quiche for tea. and enough left overs to make mini cheese and onion pasties.
Aaaannnd back to the marking.I wanna be in the room where it happens0 -
A day of ups and downs. Aren't they all!
1) MrN took sons to school for me.
2) I went into town for a cup of tea with a college friend.
3) Back home and MrN's mum came round for a chat. :-)
4) Got the boys from school and took them strawberry picking.
5) Tasty tea of salmon fillets, cous cous and sweetcorn followed by strawberries and cream.
6) Bigger son went to karate so I had an hour's peace.
The downside is that, outside karate in the hall, one of MrN's good friends said "Have you seen MrN recently? When you do, let him know X, Y and Z" and that threw me into another spin, wondering why MrN hasn't told any of his friends that we have been going out. For 10 months... It is one of the subjects that came up last week in my shouty, texting fit and we haven't actually discussed any of the things that were worrying me. So perhaps I'll try and broach that one again tonight. :-(0 -
Evening all,
Frith - Good luck for tonight
CCP - hope your snuffles improve soon
Kittikins - Hope the headache is better now
I am really tired tonight so it is going to be an early night for me after 12 hours in the office
1) NSD
2) Healthy salad for lunch followed by home grown strawberries
3) I have to do a presentation tomorrow to my big boss and a senior person from the global HQ tomorrow. I have had to write a strategy and action plan on a really really complicated area of our supply chain and I have really struggled with it. I asked for some support from a couple of colleagues and they willing gave it to me and have really helped me get my head straight. Just have to get through the presentation tomorrow!
4) Yummy samples of Go Ahead bars... YUM!
5) Lovely sunset on the drive home.
night all.
LMan plans and God laughs...Perhaps travel cannot prevent bigotry. But by demonstrating that all people cry, laugh, eat, worry and die, it introduces the idea that if we try to understand each other, we may even become friends.0 -
Evening all
CCP - Hope you feel better soon
1) Lovely sunny day
2) Finally getting my head around the work pack I'm dealing with
3) Lovely walk in the park at lunch time with my Friday night date
4) More flirty e-mails from the above
5) This really shouldn't be a pleasure but i feel smug - got an e-mail from a friend from my last job telling me that things were falling apart - they also told me that the people who had given me a nudge out of the door seemed to be regretting it - I wondered why they rang me this morning asking lots of questions
Hope you had a good day.....can't wait till Friday :j
C xAs my dad always used to say 'Just because you've got the money doesn't mean to say you have to spend it all at once'0
