Aubergine pasta bake (serves 2 - 3)
1 aubegine - sliced
6oz pasta shapes
1 onion
1 tin toms
pinch sugar
1/4 tsp cayenne pepper
1/2 ish tsp mixed herbs
dash tabasco
olive oil

Fry aubergine slices in the olive oil (I tend to bake mine in the oven covered in 1 cal spray though, otherwise you get through :eek: amounts of olive oil). Cook Pasta. Chop onion and fry till soft, add tomatoes, sugar, herbs and spices and simmer for a bit. Add cooked pasta and aubergine. Put in oven proof dish, cover in cheese and grill or bake (around 180 degrees - I always guess) till cheese is brown.
Have to admit that coming in ravenous at 8.15 I just grabbed some out the pan (before the adding cheese stage) and microwaved it and sprinkled it with some cheese, it worked fine. My aubergine skin was a little tough this time but i had had it a weekIt's been a staple dish in our house for years, especialy since i'm not mad about meaty pasta.

Morning
Well not a very nice day here yesterday. We woke to find police in the park behind our house and part of it taped off. It turns out a teenage girl was sexually assaulted there on Wednesday evening. Feel for her and her family so much they must be devasted. DD is quite freaked out by it all and had a night of bad dreams. Hopefully they have caught the scumbag who did it.
Anyway pleasures for yesterday,
1. Butterred crumpets for breakfast
2. Washing line dried, first time this year
3. Nice chat with Mum on the phone, she isn't very well at the moment (bi-polar) but seemed a bit calmer today.
4. While DD was at guides made myself go for a power walk. Managed 6 miles which is not too bad as have just started again. Also got to listen to the church bells of a local church where they practice bell ringing on a Thursday evening
5. Treat myself to a packet of sweeties whilst walking
6. I can post properly again

3.Went supermarket shopping after work. I had 20 items which came to $40.00. Lady at till (who was training) called for a supervisor as she must have done something wrong for it to have came to that total for as many things.......er, no.....I just watch what I'm spending.

Tealady that's so awful, the poor, poor girl. I thank God my children have never had to suffer like that. My thoughts and prayers going to the girl and her family that they can recover from the trauma. I can't pray for the b@stard who did it so I'm just wishing hard that he gets his just desserts. S xx0

Tealady - sexual crimes are thankfully still rare, but when they happen and especially so close to home it makes you re-evaluate things in your life. I hope they catch him and soon!
1. The sun came out this morning early so I got another load of washing done and out on the line, it's pretty much nearly dry and I have fetched it in as it is clouding over and we are expecting rain. It is now airing off in the clean conservatory.
2. Watched the washing blowing dry in the wind while having a quick cup of coffee.
3. Cleaned the windows inside and out but I have left the front outside bay windows until tomorrow as it will rain today! Still good to see clean windows in the sunshine though.
4. Just finishing off some household chores, dusting etc and confirm that the laundry basket - for once - is empty until tomorrow that is!
5. Watching our black labrador having one of his doggy dreams with intermittent woofs. Just the best!

here are mine
1. Friend took my oldest out in the sunshine to the park and fed him tea
2 nsd today
3 went for my free eye test prescription hardly changed so don't need new glasses.
4, 2 free bus ticket arrived today because my husband has been complaining every time they don't have the heating on the bus.
5 learning how to connect the camera to the laptop ( this was my new years resolution)

5 for today quickly before collecting sons and their sleepover friends.
1) Got up early so had pancakes for breakfast.
2) Went into town and got the curtain pole bracket to replace the one sons broke the other day.
3) Popped into Sainsburys for bits for the sleepover.
4) Chat with my brother.
5) Just done a bit of DIY! I have one arm that has about 15% of the movement it should have (at the elbow) so it's always a bit awkward. But I managed to knock the old rail out of the "new" wardrobe (it ran front to back, rather than across the wardrobe) and screw in the new holders for the new rail. I also managed to saw the new rail to exactly the right length - very awkward when you can only hold it still with your foot! Ran out of time so haven't done the new curtain pole thingy yet.
6) Just about to pick sons and friends up for aforementioned sleepover.0
