5 OS Pleasures in your Day Today part 2

  • Kittikins- here you go

    vegan ginger cake (makes around 16 x2 inch pieces)

    350g plain flour
    225g sugar ( I use dark muscavado for the colour but any works)
    100g sunflower oil
    2-3tsp ground ginger ( I like more than this)
    1tsp baking powder
    half teaspoon bicarbonate of soda
    60g treacle*
    225ml boiling water*

    Optionals= up to 1tsp ground cinnamon and/or same ground all spice

    Mix all ingredients together except treacle and boiling water which I mix together separately until the treacle has dissolved.I then add this to the other ingredients and mix until it looks like smooth batter in appearance.

    Pour into an 8 inch square baking tin lined with greaseproof paper bake for about 40 mins on Gas mark 4 or 180c until risen and skewer comes out clean.

    Got too busy to post yesterday, however it means that...

    1. I've enjoyed reading the catch up.:D

    2. Getting bucket loads of paperwork sorted and almost getting DS1's accounts in order which is a big relief.

    3. Decluttering more stuff. I'm gradually getting closer to getting my under the stairs 'pantry' ready for shelves.

    4. Good vegbox delivered today: a sensible one with very usable stuff.

    (The only tricky thing is that they have given me a small marrow as well as courgettes. Has anyone got a tried and tested recipe for marrow and ginger jam? I've got jam sugar in the cupboard and lots of ginger (powder) that needs using up.)

    5. Sitting and working at home in a really quiet house (both DSs were out all day) at my lovely new desk.

    Mmmmm, thank you for the recipe Chickenopolis, if only I didn't have to go to the office early today, or I'd be making it NOW, that sounds soooooooooooooo delicious :):)

    had an excellent evening out last night! However....early starts after late nights don't mix anymore!

    1. Very busy day at work! Ended up working an extra 1.5 hours to help out, so a wee bit extra cash!

    2.Nice to be home, had a cool shower as I was very hot & bothered. Not that weather was particularly warm, just me! Lay on bed for half an hour and read my book whilst DD1 cooked dinner....bribed her & bribed DD2 to handwash some dishes! DS had already loaded dishwasher.

    3.I have enjoyed seeing all my friends kids photos on facebook this evening. They are back to school in Scotland today, so a few of them it's their first day of school.

    not really got a 4 or 5....just been working hard!

    Hello all

    Here are my pleasures for today:

    1 - DS flew to Hungary this morning early and we were driven to the airport (and back - DD, me) by DD's BF, it was very kind of him and it meant that DH did not have to get up in the middle of the night and then go to work after the drive.

    2 - I went back to sleep after the drive and slept until 10am when DS's text telling me of his arrival woke me up. Thanks God for his safe landing!

    3 - Laundry washed and hung to dry in the garden

    4 - Visit from neighbour with invite for her son's wedding, unfortunately we cannot go because we are away on the day but it was lovely to catch up with her and her MIL. We gave them a congratulation card and some vouchers to pass to the

    5 - DH and I are inviting DD and her BF out to dinner to thank them for being always so helpful.

    6 - STOP PRESS just got a text from DS, all is well and he is in a restaurant about to eat Goulash, bless him!

    Good evening everyone

    20400keith- would have loved to have seen the badger eating the cake on the lawn.

    5 for today

    1. Thinning out cabbage seedlings, wearing my late fathers weight lifting belt due my bliddy back! Although I have raised beds any bending causes 'orrible spasms due cervical laminectomies (to remove a large spinal cord tumour 13 years ago ). Pain aside, I am lucky to be here and I enjoy being able to do "normal" things despite things taking much longer and requiring practical support from others. I cherish each day now, sounds cheesey but true:)

    2."Finding" lost potatoes - I was sure that I had dug them all up several weeks ago .

    3.Courgettes and "lost" potatoes from the garden for tea:)

    4.Washing dried and brought in just before it started to rain. The rain will be good for my veg.

    5. Vegan ginger cake - the flavour has improved today. OH will eat what is left with some custard later -if I have remembered to leave him some....:rotfl:

    Evening all.

    Chickenopolis - that cake recipe sounds so good. :drool: I've saved it to my recipe file as an encouragement to stick to my diet - when I reach my target weight I can make and enjoy some ginger cake. :)

    I did, thanks - my manager is very careful to be nice to me at the moment as she's worried I might tell some of the senior colleagues I work with about the way she treated one of my colleagues a while ago. (I wouldn't actually say anything, of course - it's for my colleague to complain or not as she thinks appropriate - but I must admit I enjoy the resulting niceness from my manager! ;))

    My 5 for today:

    1) Acquired a new pair of trousers for nearly half price in the M&S sale. :money: (Sadly I only remembered afterwards I also had a voucher which I could have used :doh: - I'll keep it until next time they do the meal deal instead and treat myself to a free dinner instead. :))

    2) Spent half an hour or so wrestling with one of the special offers from the MSE newsletter - the £10 train voucher - and eventually got a welcome email from the company so I think it worked. :j

    3) It rained all afternoon but stopped just as I finished work.

    4) Put together next week's meal plan and I won't need to buy anything except some veg. :money:

    5) Curry for dinner, from a bulk cooking session last month, with an Approved Food naan bread - very OS. :D

    Evening all :wave:

    1) Slow gentle day at work
    2) Chats with my mum and my auntie yesterday
    3) Delivery from next and everything apart from one fits nicely :D
    4) Lovely pork chop for dinner
    5) Friend from one of my old platforms is in town so I'm off to meet him for a few drinkies :beer:
