Wow sis, that pizza looks bloody fab

Will make one next time they have a take away one.
Did you use fresh cauli or frozen, and did you squeeze it in a tea towel, any tips welcome.

Been good today, i'm ok if i avoid going out with friends, i'll just have to isolate myself for 3 years ;)

Sweet, when you get back into it, doesnt it make you feel mad that you didnt keep it up, think how slim we'd be!!!!

I used frozen cauli and cooked it in the microwave, drained it then let it cool for a few mins then grated it, wrapped it in a tea towel and wrung it out ( thanks sweet ;)) loads of water came out , mixed it in a bowl with egg and gruyere cheese ( i think the recipe said mozzerella but i didnt have any)
spread it onto a baking tray ( i put baking parchment under to stop it sticking) shaped it into a pizza shape ( just used my hands to press it down and shape it )
sprinkled mixed herbs over and cooked it in the oven for 15 mins :D

you then add your toppings and grill for another 10-12 mins (make sure meat toppings are already cooked ;))

    the recipe i used was:

2 cups cauliflour ( worked out at half a bag of frozen)
    1 cup mozzerella cheese (grated)
    1 egg
    mixed herbs

the good thing is there are still 2 slices left which i can have cold for tea :D

forgot to say , it would make lovely garlic bread , I had a little bit of the base left over which i cooked ( minus the mixed herbs) then sprinkled garlic salt on and grated gruyere , baked it again for a few mins - it was delish , I reckon you could make it with garlic butter on :j

Also, did you grate the cauli with a cheese grater or do you have a ricer thingy??

Yeah, but I'm not gonna dwell on it, I have my positive head on today!!

    Morning peeps :hello:

I got through day 1 of low-carb unscathed yesterday so I'm really chuffed with myself :D I don't feel too bad this morning, a bit of a headache but that might be the 2 glasses of wine I had last night. Just had a protein shake for brekkie - have to say they are soooooo much nicer with a few frozen rasps blended with them, imo they are tastier, thicker & more satisfying.

    B - raspberry protein shake
L - lc cumberland sausages with 2 egg omelette
D - roast chicken, cauli mash, green beans, creamy mushroom sauce

A couple of lc crispbreads might also feature somewhere in my menu today, it depends how I feel. I'm also hoping to make some roasted BNS soup today, so I'll have a bowlful of that as well. I don't intend going hungry on this WOE!! :rotfl:

Happy days everyone, hope y'all doing ok

sis...the cauli doesn't need to go through the holes....the liquid goes through the holes, leaving the cauli pretty dry inside the ricer. If you kinda 'fork' it up it's ok.

Have you tried just grating raw cauli for the base, sticking it in the mic for a few minutes and using that? I'm sure I saw someone had done that very sucessfully but I can't remember who.

It's not, at the minute. I've got a wee problem with TOTM right now (unaturally and seriously, seriously heavy, sorry if tmi) that I think I need to go to the Doc about so the gym has been delayed, again. I did some exercise in the house but had to stop within minutes because of the above so I'm not venturing anywhere near the gym until it stops. :o
