    Any ideas how I could make the 'tomato' type sauce that they mix with it?

    I made a chicken salad with pasta last night for dinner and brought the leftovers in for lunch....roll on lunchtime! I got a recipe for, I think it was called, oriental duck salad from the Good Food mag. Supermarket didn't have any duck so I bought chicken breasts with skin on instead (healthier too :D).

    I'll give the recipe for a main meal but you could reduce it just for a couple of lunch boxes.

    Make up the marinade, (this is for 4 chicken breasts), 2 grated garlic cloves, a large knob of ginger peeled and grated, 2 tbsp soy sauce and 6 tbsp clear honey.

    Fry the chicken skin side down for 4 minutes then turn over just to brown. Put the chicken in an oven dish and drizzle over marinade, keeping back about 2tbsp. Stick in the oven for about 12-14 minutes.

    Mean while cook some pasta and stir in a dolmio stir in sauce (although I'm know there are OS sauces, I was just feeling extravagant!)

    Make up a salad of rocket and watercress, halved cherry toms and sliced spring onions, mix it all up. Shove it on a plate with the sliced chicken breast on top, spoon a bit of the left over marinade on top and serve with the pasta (and garlic bread if you've got it :D). Save some leftovers, mix it all up and have it cold for lunch the next day.

    Homemade pasta salads can lack taste if you overcook the pasta. Personally I love homemade tortellini salad - quick and tasty and filling too - not as cheap as dried pasta but so much more flavoursome!

    Fresh tortellini (Lidl's spinach and Ricotta flavour is great)
    Mayonnaise (as much as youu need to get it to the consistency, again I recommend Lidl's own)
    Chives (I cut mine fresh)
    Finely chopped red onion (one medium onion will do)
    1/2 red pepper chopped.
    1oz cheddar (medium or mature), grated

    Cook the tortellini, drain well, and combine with the rest of the ingredients. Twist of black pepper and it's ready to go.

    This is yum and you can combine it with chicken, bacon or ham to make it even more substantial.

    The trick to making it taste like the shop bought ones is when you cook the pasta use a stock cube, either chicken or vegetable. Trust me it makes all the difference!

    I know it's not chicken, but...

    tuna, pasta, chopped up onion, cucumber and mayonnaise all mixed together. It's gorgeous, very creamy and tastes like those shop bought fattening ones, with less fat and less cost! ( I recommend the pasta spirals).

    I've got another 'I know its not chicken, but...'

    I use cooked pasta, cucumber (peeled) and cubed, sweetcorn, peppers - diced and a handful of peanuts mixed up with a little mayonnaise. It's yummy and another hit :)

    Morning all,

    hoping someone can help. I frequently make pasta salad with mayo, but I find that if I make it the night before and stick it in the fridge, by the time lunch comes around most of the Mayo is dried into the pasta. Am I simply not using enough Mayo - eny idea?

  • I find that if I let the pasta cool first and them add the mayo it doesn't dry in.
