What i've gone for today is quite plain. I blitzed mushroom, onion and green pepper in the processor and gently cooked in a little olive oil. Then added a tin of toms and some tom puree, plus herbs and seasoning. I then stirred in the cooked pasta.
My son tried it whilst it was hot and gave it the thumbs up, so im chilling it now, hopefully it will be to his satisfaction!

Well the cold pasta was delicious.. but a bit sticky.
How do I overcome this? Bit of olive oil in at the end?0 -
Couscous: Use about double the amount of boiling water as you have couscous, simmer it for about a minute with a bayleaf and a bouquet garni 'teabag', then leave in the pan with a lid on for a few minutes to soak up the rest of the water. Fluff it up with a fork. Add roast veggies with herbs, sprinkle with toasted pine nuts.May all your dots fall silently to the ground.0

Being so hot, I have been making potato salad and rice sald a lot lately.
I just throw it together and it seems to work.
(You can add anything else you want, peppers, walnuts, celery, who cares as long as you like it?)
Easy peasy potato salad
2 large cans of cheap tinned potatoes. These are already cooked and ready to go. chop them up into slices
Add a few sping onions chopped,
salt and pepper
Mayonaise to mix and your done......
Rice salad
A bowl of cold rice (not stuck together in lumps).
Add some salt and pepper.
Large blob of mayonaise
few spoons of sultanas and canned sweetcorn
a bit of chopped red pepper if you wish
and for that special touch a squirt of ASDA's new curry ketchup.
Works fine. You can't go wrong.
I went to a picnic yesterday and someone had made a rice salad..... disgusting!! big lumps of soggy rice and a few veg, no salt or seasoning....NO to pasty tax We won!!!! Just shows that people power works! Don't be apathetic to your cause!0 -
Leonie I add a little olive oil when cold if sticky - you could add some tomato juice or just a little water and mix well if too thick.Saving in my terramundi pot £2, £1 and 50p just for me! :j0

If (like me) you don't like mayonnaise, you can replace it with creme fraiche (or sour cream if your feeling sinful) in oasta, rice and potato salads.Peek-a-boo0

i would like to make some type of pasta meal for my lunch boxes. I live at home at the momment but will soon be finding a place of my own so i am experimenting here :rotfl: anyways i have pasta (dont know if they come in different varieties but this is just basic yellow pasta) and i have a tomato pasta sauce from aldi (52p glass jar)... now how can i make a yummy pasta dish that i can throw in the microwave to heat up if i want it warm or also eat cold? also how long can things like this last if i frezze it and then in a refidgerator?
also any other cheap meals to make for luchboxes (that i can say have a main meal at night with) will also come in handy... i have been searching this board (originally from dfw) for ages and have made my own little book/sheets which should help when i move out ~ thanks0 -
ok make the tomato pasta and a few tinned mushrooms, some sweetcorn and anything else that takes you facy e.g peppers.
And top it with some cheese.
If you heat this up the cheese will melt and be yummy.
Im not sure about freezing pasta tho.

I make a pasta dish with either mince lamb or beef.
Onion
Beef/Lamb mince (depends how meaty you want it?)
Baked Beans
Boiled Pasta
Cheddar grated
Fry onion, add mince...cook then add beans. Cook pasta, then add pasta to meat/sauce and put grated cheese in. You can either serve up like this or put in oven for 15 mins or under grill. This is ok to freeze and warms up well in MW.
You could also have cold pasta with tuna/chicken or roasted veg.
Or do a large Lasagna as this re-heats very well and serve with salad or baked spuds.

My mum makes a nice one for picnics, and the leftovers are lush for lunch
Its her take on an Ainsley recipe, but essentially she cooks some pasta (any shape, but not long pasta), heats some passata (pasta sauce) in a pan and adds chopped peppers, butter beans and a dash of chilli (tabasco generally) and lets it cook for a bit. Then adds the drained pasta to the sauce and voilà!0
