I cant eat a lot of pasta in the daytime, more than a few spoonfulls sends me off to sleep!
I experimented last summer with the mini pastas that you get for soup making with roasted veg & tomato sauce. this worked much better for me thatr standard pasta bows as it was more veggie based than pasta based IYSWIM
and not as heavy.
For this I used 1/4 bag of mini pasta shapes (these are about 25p a bag in tescos)
pack of tescos passata ( 27p)
onion, halved mushroom, courgette, pepper whatever I had in basically ( butternut squash was good too!) lobbed in a bit of oil in a pyrex in a med- hot oven with sliced garlic
cooked the pasta, drained it , added that to the roasted veg and mixed in the pack of passata.
this fridges well for a couple of days too, reheats in the micro, or good for picnics, cold salad type affair. thanks for reminding me, Ill make some of this this week!:beer: Well aint funny how its the little things in life that mean the most? Sun dried tomatoes or cherry tomatoes
Raw broccolli florets

We quite often have pasta lunch boxes! I fry up some mushrooms, onion and anything else lying around (or just those if that's all i have) and then mix with cooked cold pasta and some vinaigrette, or if we're flush, some pesto.... mmmmmmmmm0

I don't think this would work hot because of the cucumber, but it's lovely cold.....
200g pasta
375g salsa dip (mild or hot, whichever you prefer)
200g sweetcorn, drained
quarter of a cucumber, diced
if you don't like cucumber you could add chopped pepper or tomato
Just cook the pasta, drain, rinse thoroughly then drain again.
Add above ingredients, mmmmm.....
4-6 portions and it's low fat0
