  • I grill some vegetables (aubergine, courgette, onion, tomato, mushrooms) and halloumi cheese and mix with wholemeal pasta and baby spinach. Maybe bung some frozen (well, thawed out, but you know what I mean!) sweetcorn in to bulk it out a bit.

    I put olive oil over the top, and add some kind of herbs (fresh ones if I have them growing on the windowsill, but dried ones if not.)

  • I like tuna pasta salad cold, with diced cucumber and sweetcorn. Boursin cheese is lovely stirred through into hot pasta, mushrooms and onions could be added. This could easily be warmed up after too.

    I have plenty of eggs to use up and want to make cold lunches to take to work. Does anyone have any basic or interesting egg based pasta (or couscous, rice) salad recipes? Also how long will they last as I'd prefer to make a batch for a few days. So I'm assumeing dairy products with lemon would not be the ones to go for. I have all the usual storecupboard stuff, plus some unusual! Thanks all. :)

    I'm just getting food ready for a bbq and have made a coucous salad using some frozen roasted mediterranean veg and veggie stock for the liquid. It tastes lovely, and I'm sure you could add chopped up hard boiled eggs to it.

    Try cooked pasta, chopped up boiled eggs, ham chopped up into little cubes, finely chopped spring onion, salt, pepper and mayonaise.
    You could also add some cold cooked peas.

    Otherwise, boil some baby potatoes and then chop those up with diced spring onion, chopped up boiled egg, salt, pepper and mayonaise.

    You can also make a tuna salad, with lettuce, chopped up tomatoes and boiled eggs, chopped spring onions, salt, pepper and mayonaise.

    Ok so, I have just agreed to attend a BBQ, however I have nothing but pasta in to make a dish to take with me. Does anyone have any ideas what is cheap and easy to add to it to take? I have eggs, tuna, all spices, loads of cans, cheese etc in. I just don't know where to start. I have an hour or so and very little cash - hence the pasta base!
