    The cauliflower 'rice' is my all time favourite with spicy dishes, curries etc. Whoever thought of that one is a genius! I also do turkey mince with lots of chopped up small veg (that breaks down) and thin gravy , slow cooked and serve it poured over a big plate of more veg. Yummy and very comforting! Carrot and swede mash and parsnip mashed are other good ones!

    I bought a 3 tier steamer saucepan from Asda ages ago (£9) and find it easy and economical for cooking lots of different veg for one meal. Definitely encourages healthier eating!

    Going to have my week 1 WI in the morning......!

    Edited to update with my weigh-in results, which are the same as Friday so 3 3/4lbs loss in total for first week !!
    Will try and hold out for just a once weekly weigh-in I think next week!

    Made a gorgeous dinner last night of turkey and about 9 types of veg frittata with a side salad. I'm the sort of person who doesn't really feel full unless I've had some "proper" carbs with a main meal so I was pleasantly surprised that this kept me nice and full.

    I've realised that I can't buy crusty white rolls for the forseeable future though. I bought a pack of 4 on Friday and ended up having to throw the last two in the bin as the temptation to scoff them all at one go was killing me :o When I have more self control they may go back on the shopping list but not for a while yet - I don't want to undo all the hard work!

    Do other people meal plan successfully? I've ended up with porridge for breakfast and lunch today as I totally failed to get up in time and so had to grab the first thing that came to hand :rotfl: I really need to get more organised!

    I found out about it at Slimming World years ago! Cook cauli (I like it still slightly firm, definitelynot mushy) and mash it with a fork until it's quite fine. If you serve it as you would plain rice with a curry or other spicy dish like chilli-con-carne or veg chilli, it is just like having a big plateful of boiled rice. I think the trick is the texture is quite similar, as is the appearance and with a spicy dish, you honestly don't notice a cauli taste. Maybe you might think yuk!, but it's really worth trying!

    Better to make your own low-fat version, I know, but if we're having an Indian takeway, I cook the cauli 'rice' for myself (you can keep a bag of the frozen stuff in...just don't overcook it or the texture's wrong!) and we share one meal between us (I have less than him!) or freeze half for another time immediately. We get a spicy curry so a little sauce goes a long way flavour-wise and I do some sides of finely chopped tomato and red onion; chopped fresh mango (instead of chutney) or sliced banana; low-fat natural yogurt with chopped cucumber and/ or fresh mint. Depends on my mood and what's in the fridge.

    All the extras, plus the cauli rice pad out the meal, give you lots of extra veg and you feel like you've had a real feast, without doing too much damage!

    Have somehow between returning home and this morning, lost that other 1 lb that I had gained over my hols so I'm STS this week :D:D and super duper chuffed. I'd love to lose 4 lbs before end of the month but with one WI left I don't think that will happen, so another 2 lbs less in Oct would be great.

    Alex - I have an awful time trying to meal plan as well it always seems to go wrong. I need to organise myself, so I don't end up having shreddies for lunch again like I did today. My diet just gets more and more studenty by the day :D
    All the coffee in Columbia won't make me a morning person... :D:p

    I like the sound of cauli-rice. I might try it as a 50:50 mix and still have some "real" rice.

    I saw 10st 10lbs over the weekend after my 10st 7lbs earlier in the week. Grrrr! this last bit of fat is being tenacious.:mad:

    In a mega rush, just time to say I'm 10st 12lbs today, thats 1lb off from last week. Not a huge amount but better than nothing! Well done and good luck everyone!

    WI today at 11-7, three lbs lost since start of the month and one week to go.
    quite pleased with this as I was away from home for 2 weeks and out of my usual routine.

    Will be happy to end the month on this and go into Oct. for the next round.
    Thanks again to everyone especially The Dragon who had this great idea in the first place to target just 7lbs,one month at a time..
    It` s marathon not a sprint!

    Gr, 2lbs on again. Oh well, the trend is down still, and I'm eating well so I'm justgoing to keep on the straight and narrow and hope! :)
  • Sorry I've been MIA, had a bad few days after my first few post put of 4 pounds:mad:, but I lost it again:j so I'm still at my starting weight (9st9) - I've been really good since last Thursday - no snacks, sweets, junk etc etc have past my lips (nor have I wanted them) I think I well and truly put myself off junk when I had the bad few days - argued with oh and ate, ate and ate:mad: - the argument was my fault I was due on and I can't help it I just pick any excuse to argue with him (bad pmt). Anyway I'm back on track and off the sweets and crap food, so hopefully I will actually lose something from my starting weight in the last week of the challenge, fingers & toes crossed
