grrr was going to suggest that one jojo! thats my cheat one for parties! my other fave recipe is quite complicated but absolutly delish and i only do it when begged and bribed.
its
special party pate
8oz chicken livers
1 raw chicken breast
8oz sausagemeat
large onion peeled and chopped finely
large egg
salt, teaspoon thyme, bout 5 or 6 juniper berries crushed well (optional)
black pepper good grind or two or a large pinch
3 oz melted butter
chop the chicken livers quite small and also the chicken breast (you can use leg or thigh meat if you want for economy) add the sausagemeat onion whisk the egg lightly and add that, then the thyme pepper and if using the juniper berries.
mix together and put into a terrine or or a loaf tin which holds about two pints. then put the tin into a baking tin and add about an inch of hot water. put into oven at gas 5 and bake in centre of oven for about 2 and half hours.
now leave the pate to cool and carefully pour away any juice
now you need to cover the pate with cling film or baking paper and weight it down and leave overnight in fridge.
next day take off the clingfilm then you decorate it! i like to use bay leaves and orange slices or you can leave it plain. pour over the melted butter and leave to set.
will keep for about 3 -4 days in fridge but you can freeze it - it will last at least a month in freezer.0 -
Bet your one tastes fabulous though Tandraig! I love the easy one as DD2 can cook it (such a show off!) and she will eat liver that way. ty jojo - have you thought of adding a slug of port to your recipe? makes it taste quite grown-up! lol (my other cheat recipe for grown up parties) whoa - this looks as if I do nothing but party!!! not true - am usually found in front of computer! but my food - well - even if i do say it myself - is in demand! would rather cook for than be AT a party!0

Depends on amount wanted to be made.
1x large tin of tuna (I mean the really big cans!)
1x lump of edam
1x medium onion
a little sherry
2 table spoons of double cream
Drain the tuna put into a bowl (best to use the bowl that you are going to leave it in.)
grate the edam, chop the onion and mix in with the tuna. season with pepper if needed.
add the sherry, a glug or two.
mix the double cream in and smooth the top down with a fork so it looks nice. You can pour a little melted butter on the top.
Put in the fridge, it is best eaten at least the following day but it tends to taste better as the days go on.

Try fish and low fat cream cheese. You can make variations on this (nice served with slices of apple)Alternatively, just have less of a meaty/buttery pate
I'm making cranberry and port pate from Gloucester Old Spot pork liver for Christmas. Currently, it's just invented in my head, but will be based on this recipe.

Hi,
I bought some frozen chicken livers today and would like to make some pate. Does anyone have a recipe as this isn't something I've ever attempted to make before!
I have searched and nothing was coming up so thought I would start a new thread.
