    I used to make pig liver pate, very easy to do, but any liver, like lamb or chicken would do

    I use recipe from my OXO book of meat cooking, only 10/6d, but google with

    liver pate recipe uk

    brings up loads

    I make this one using chicken livers ;) I've made it using rare breed pork liver, too, but that comes out coarser and stronger tasting.

    LIVER PATÉ

    Serves 2

    INGREDIENTS

    250g of liver
    2 onions
    2 cloves of garlic
    1 tablespoon of butter
    ½ a teaspoon of mixed herbs
    Ground pepper to taste

    DEFROSTING

    If you are using frozen liver, make sure that it is completely defrosted before use. Leave it in the fridge overnight, or out of the fridge and covered for 4 hours.

    METHOD

    Peel the onions and chop them into tiny pieces. Peel the garlic and chop it into tiny pieces.

    Put the butter into a saucepan on a low heat. Add the onions and garlic. Cook until they are soft. Add the liver and herbs. Cook gently for 10 minutes, mashing it together with a wooden spoon to check that it is cooked through.

    Put everything into a bowl and mash it together until it is spreadable and to your desired consistency.

    Season with the pepper.

    Serve cold on hot buttered toast.

    ADDITIONS & ALTERNATIVES

    Use chicken, lamb or pigs liver.

    Add 1 tablespoon of sherry when the liver is nearly cooked through.

    TIPS

    If you cook liver on too high a heat, it will turn out like rubber.

    This can be frozen and will keep in the fridge for a day.

    IMPORTANT NOTE

    Liver pate is unsuitable for pregnant women.
    The acquisition of wealth is no longer the driving force in my life. :)

    Can anyone provide me with a nice pate recipe for xmas .. DH wants to make one .. thanks need ti get the ingredients tonight , do I need a pate dish where can I get one of these ???:rolleyes:

    I just use a non stick loaf tin, but then I'm not too bothered what the container looks like, more the contents taste

    ohhh good idea . .. got an idea now . grease prrof paper or clingfilm and a brick to compress . result

    I regularly use a dead simple smoked salmon one. Add a pack of smoked salmon trimmings ( about £1.10 in Tesco) to a pack of cream cheese, add some dill (fresh or dried) and then just blitz in a food processor
