Hi,
I have 1lb1/2 of free range pig liver and hope to make some pate. Does anyone have a cheap and easy recipe for this.

Chop liver, season and fry in a little butter.
Allow to cool and blitz in food processor with butter and a little more seasoning.

LIVER PATÉ
Serves 2
INGREDIENTS
250g of liver
2 onions
2 cloves of garlic
1 tablespoon of butter
½ a teaspoon of mixed herbs
Ground pepper to taste
DEFROSTING
If you are using frozen liver, make sure that it is completely defrosted before use. Leave it in the fridge overnight, or out of the fridge and covered for 4 hours.
METHOD
Peel the onions and chop them into tiny pieces. Peel the garlic and chop it into tiny pieces.
Put the butter into a saucepan on a low heat. Add the onions and garlic. Cook until they are soft. Add the liver and herbs. Cook gently for 10 minutes, mashing it together with a wooden spoon to check that it is cooked through.
Put everything into a bowl and mash it together until it is spreadable and to your desired consistency.
Season with the pepper.
Serve cold on hot buttered toast.
ADDITIONS & ALTERNATIVES
Use chicken, lamb or pigs liver.
Add 1 tablespoon of sherry when the liver is nearly cooked through.
TIPS
If you cook liver on too high a heat, it will turn out like rubber.
This can be frozen and will keep in the fridge for a day.
IMPORTANT NOTE
Liver pate is unsuitable for pregnant women.The acquisition of wealth is no longer the driving force in my life.0 -

I used some of the liver from our pig to make pate. It was coarser than chicken liver pate, and strong tasting - but delicious :T I also add some garlic and thyme.
At Christmas, I added some lightly cooked cranberries and a slug of Port, for a pink and festive pate
As this has fallen from the front page of OS, I'll add it to the existing pate recipe thread.

Has anyone got some good recipes for vegetarian pates? I bought some GranoVita pates from Asda last week, and they were delicious. The first was Shiitake mushroom pate, and the second was vegetable pate. As a meat eater, trying to cut down meat intake for health reasons, I was very surprised to find how tasty they were.I have no signature.0

I would also like to be able to make those sort of pates. I have been vegan for about 16 years and have made lots of pates over the years and none have been anything like these. To this day, even though I make one or two different pate/sandwich fillings a week, I still buy this pate to alternate with also. Luckily they are easily available at holland and barrett and they have there buy one get one half price sale on until mid July.
If you want a walnut pate recipe, I posted one a couple of days ago on my blog. Also I have a sandwich section with lots of meat free sandwich ideas.
I also recomend the site mentioned above.
