    Over the years I have tried several different recipes for Rhubarb chutney and I have one that is gorgeous tastes quite similiar to Branston.
    If you are interested it is
    450g rhubarb
    350g onions
    175 g raisins
    750g brown sugar
    480ml cider vinegar
    3 tsp salt
    1 tsp grd ginger
    1 tsp grd cloves
    1 tsp grd cinnanmon
    1 tsp grd nutmeg
    Slice rhubarb and dice onions
    Put all ingredients in a large pan and stir until sugar has dissolved.
    Bring to boil and simmer for 2 hours stirring frequently (it should be thick and pulpy)
    spoon into sterilised jars and leave for 1 month to let flavours mature.

    its rhubarb time in the garden so heres some recipes

    bessies rhubarb delight
    1lb rhubarb, 2-3oz sugar, 3-4 small sponge cakes, 2 eggs

    cook rhubarb with sugar add crumbled sponge cakes, seperate the eggs and add the beaten yolks, put in a dish and bake till set about 20mins whisk whites with 4oz caster sugar, pile on the top and return to oven till firm and light brown, serve hot or cold

    rhubarb crunch

    whisk smallcarton double cream with level tbsp sugar and gradually whisk in small carton natural yoghurt

    oat crunch - melt 2oz butter and 3oz brown sugar in a pan stir in 6 heaped tbsps porage oats and mix well, toast in a moderate oven till crisp and brown

    divide 2 cups of stewed rhubarb between 4 tall glasses, spoon on cream mix then the crunchy topping, serve cold

    thanks twink, my neighbour has just given me a bundle of rhubarb!
  • we do rhubarb & ginger sauce for over ice cream, just cook couple stems of rhubarb with a teaspoon of sugar and teaspoon of water, add some chopped ginger and puree/whizz in blender. its yummy, especially warm, and i make a batch up and freeze it in portions to deforst for next nights tea.

    Going to make rhubarb crumble tomorrow but its years since i cooked it.How much sugar should i add?
    Also has anyone made rhubarb chutney?

  • Has anyone any receipes for Rhubarb other than crumble or pie? I have stacks and don't want to waste it.
  • You can chop it up into chunks and freeze it ;)
