Rhubarb makes a nice sauce for oily fish, especially mackerel or herring if chopped and slowly simmered without water until mushy..add a little ginger, fennel, dill or rosemary but no sugar

I tried rhubarb and beetroot soup the other day at my friends. I don't have the exact quantities I'm afraid but it was equal amounts of rhubarb and beetroot, stock and seasoning.
It was REALLY NICE - but i do love beetroot though. Somehow the rhubarb took away the 'earthy' taste of the beetroot.
I believe the recipe was in the New Covent Garden Soup For All Seasons book if anyone wants to look up the qauntities.0 -
Unfortunately I don't have the recipe, but my grandmother used to make a toad-in-the-hole type of thing, but with the sausages replaced with rhubarb. It was seriously yummy!

Sounds a bit like the recipe I like to make sometimes -
Try this;
4oz SR Flour
2oz marg
4oz sugar
1lb rhubarb prepared and cut up
5oz milk
Rub in fat &flour.
Mix in other ingredients -beat it a bit - it's like a batter.
Arrange rhubarb in a tin or ovenproof dish and pour batter over the top.
bake in a hottish oven (no 6 in my oven)
I also tried making a rhubarb trifle once.:shocked:
Used green jelly.

Ordinary rhubarb crumble or for a bit of a change, add apple and sultanas to it too :drool: My fave
If you're into making jam, rhubarb and vanilla is gorgeous - especially with rose water in it. I'm sure if you google around, you could find a suitable recipe.
My next house is going to have a rhubarb patch - I just adore the stuff. Mind you, if you have too much, bung a bit in an envelope and send it y way
PS Don't forget to add enough sugar!! Years ago my sis and I were jointly making a sunday meal which included a rhubarb crumble. I thought she'd added sugar, she assumed I had........... talk about making your teeth squeak!! :eek:0 -
One of my all-time favourite puddings - Delia's Rhubarb Meringe pie.
When I stew rhubarb, I sweeten with HM marmalade - delicious.
Delia has a rhubarb and almond crumble recipe. Try the site above, and search on *rhubarb*.
Ginger goes well, too.

The recipes on this thread are great, especially the ones with ginger as it's my latest fad for some reason ...... ginger with everything possible!
I don't know if anyone will find this useful, but I use honey as a sweetener and so far, the family haven't noticed any different to using sugar.
Also, when I make crumble, I use I part rolled oats to 3 parts flour as it adds texture. Apparently, no-one likes oats in our house, yet they scoff the crumbles like there's no tomorrow....;) :rotfl: ! (stranger still is that they love flapjacks ....).
My eldest DS is a chef and has told me already to just lightly braise the rhubarb as it retains it's shape and texture. (I was taught to cremate everything and cooking is novelty to me now he's a chef...)

stewed rhubabrb is a great favourite with my family. It freezes very well and occupies less freezer space than raw. Rhubabrb and ginger jam is also deliciousI'm sure you can find a recipe for this on google.0
