My dad would agree with you on the sandwiches Shez.He is on a quest to buy a plain ham sandwich with butter(not spread) on white bread.I don't think they exist any more. You are right, simple is good.

Rhubarb and ginger though,is quite a traditional combo.I've bought some rhubarb this morning and I intend to make a sort of trifle.I'm going to cook the rhubarb with some preserved ginger, puree it(child friendly ;) ).Then I'm going to layer it in glasses with custard and yogurt.Oooh! I've just remembered there are some crushed ginger biscuits in the freezer. They can go in between the layers.Ooh it's going to be good - Rhubarb and ginger sundaes :j

Unfortunately I don't have the recipe, but my grandmother used to make a toad-in-the-hole type of thing, but with the sausages replaced with rhubarb. It was seriously yummy!

    Strawberries go well with rhubarb.

A local bakery does a rhubarb and strawberry slice. Very nice.

What about rhubarb instead of pineapple unpside down cake.

Oh my gosh yes, Rhubarb and Strawberry crumble!!! Driiiibbbbbleeeeee.......

IT is amazing, my mum does the best rhubarb and strawberry crumble. Not last year but the year before, dad was on chemo and this was one of the few things he could fancy.

Growing my own rhubarb this year - wasn't big enough last year when we planted it - will deffo make that!
It's nice to be nutty but's more important to be nice

I adore crumble. As far as crumbles go, one of the nicest I ever had was in a small cafe in Castle Acre (Norfolk). They did rhubarb and banana crumble with the fruit cooked in orange juice. Not a combination I would ever have thought of, but it was delicious. I've done it since and sometimes add raisins or dates instead of sugar. Works well.

It's a rather distant memory I'm afraid, but I'm fairly sure we used to have custard on it. I think there was another variant that used apples instead.

In the end, I cooked it with a little sugar and made rhubarb fool with half of it and used the remainder to make rhubarb and blackberry crumble as I had some in the freezer from summer to use up. I had some of the crumble with ice cream and it was deliciously moreish.
I have the mind of a criminal genius. I keep it in the freezer next to Mother....
