Just cover chunks of it in sugar and eat it raw! Just like the old "sweet and sour" sweets!
The amount of sugar you need to cook it is far lower than the amount of sugar you find in the same weight of chocolate and it is far healthier. Part of a balanced diet and all that, but personally I wouldn't worry about it.
When you have cook up rhubarb, keep some of the juice back in a seperate jar and cool it in the fridge. You can then mix it with sparkling wine or vodka and lots of ice. Yum!
