I picked up some reduced rhubarb today and although I'm not very keen on it myself; DH loves it. I grow rhubarb in the garden and usually make him a rhubarb crumble or rhubarb and gooseberry crumble.
Any ideas on what I could do with it that doesn't involve crumble? I don't really want to do anything along the lines on eves pudding either.

Rhubarb fool
Cook the rhubarb with sugar till mushy,blend it to a puree.Whip some double cream.Stir together.You can use thick yogurt instead of or in addition to the cream.Or for a more frugal version you can use custard made from powder.0 -
you could alternate cooked rhubarb with crushed ginger biscuits and either yoghurt or cream0

Rhubarb fool it is then! I have both yoghurt and cream in the fridge so might mix the two to make a bit lower in fat.
