  • Just a FYI. The rhubarb plant needs time to build up it's reserves for the winter to be able to produce next years crop. It really shouldn't be harvested much after the end of July or you risk weakening the plant.

    And it tends to be very tough and stringy if you pick it this late in the year. Probably best to leave it now.

    I always make rhubarb and ginger jam with mine and it's lovely and easy to make. Also it freezes well in chunks and you can then use it in the winter. Make large batches of crumble topping when you make a crumble as this freezes very well and will stay seperate and just pour out. I freeze my crumble topping in a plastic bag.

    Friends who i worked with always put it in sugar free jelly for a healthy snack. It sounds disgusting but is actually really nice.

  • My rhubarb plant is just a baby so haven't picked it this year but my lovely dad brought me two carrier bags full of rhubarb a bag full of cooking apples, two punnets of blackberries and I have plums on the way.
    I washed and prepared and bagged up in the freezer. Also couldn't resist a crumble, made an extra one for my nan- which she loved! I'm sure we all have a family member/neighbour/friend that'd be grateful of a nice filling home cooked lovingly prepared pudding.Spread the joy! She was well happy!!

    Yes honestly...lots of it. My dad asked me a few days ago if I wanted some rubarb. Being the good OSer that I am I of course said ohhh yes please I'll freeze it.

    Well last night he did bring some...lots of it. And now I realise I don't know how to freeze it. Is it a case of bunging it in some bags and then in the freezer, or do I have to do something to it first?

    Someone told me that they thought I had to blanc it and then put it in a sugar syrup before going in the freezer....but I knew that someone here would have done it before, so thought it was a good idea to ask you knowledgeable folks.

    The other question is what can I do with it other than crumbles, pies, jam and mixing into plain yoghurt. I've a feeling OH will get sick of rubarb crumble before long.

    Ooooh childhood memories of rhubarb and date pie, my late Mum's favourite - I love it too! Still needs a little sugar, but the dates soften and sweeten the rhubarb beautifully.

    Rhubarb and orange is nice too. Uses about 600g rhubarb. Cut rhubarb into 1" lengths. Make a sugar syrup, once sugar has dissolved bring to the boil and add the fruit. Cover and simmer gently for 3-5 minutes. Remove from the heat and leave covered. When cold, add the juice and finely grated rind of an orange. It's lovely chilled on it's own or with ice cream, yoghurt etc. The fruit and juice stay a pretty colour of pink. That was my late Dad's fave.

    Simple tastes, but yummy.

    Rhubarb and ginger jam is delish on hm scones.....
