Cooking for the Freezer..

  • Bacon and cheese croquettes

    This is enough to make 20
    4 rashers bacon, finely chopped
    cold mashed potato
    1 egg yolk
    2 spring onions, finely chopped
    100g plain flour
    40g mozzarella cheese, cut into 1cm cubes
    1 1/2 cups fresh breadcrumbs
    1 egg
    60 ml milk
    olive oil, for shallow-frying

    Heat a medium non-stick frying pan over medium heat. Cook bacon for 3 to 4 minutes or until crisp. Drain on a plate lined with paper towel.
    Combine mashed potato, egg yolk, onion, bacon and 60g flour in a large bowl. Roll heaped tablespoons of mixture into 20 balls. Push 1 cheese cube into the centre of each ball. Mould mixture around cheese to enclose.
    Place remaining flour on a plate. Place breadcrumbs on another plate. Whisk egg and milk together in a shallow bowl. Roll croquettes in flour, shaking off excess. Dip in egg mixture. Coat in breadcrumbs.
    Heat oil in a deep frying pan over medium-high heat. Cook croquettes, in batches, turning, for 3 to 4 minutes or until golden. Using a slotted spoon, transfer to a plate lined with paper towel. Serve with salad.

  • Mmm going to have to try those croquettes. So far have a load of chilli con carne, one portion of leftover rabbit ragu and 4 fish pies in the freezer!

    Rabbit ragu was a great success- recipe is here

    I just served it with dried pasta and left out the juniper berries as I hate them!

    I have one the american style fridge freezers and although freezer is great I am fed up struggling to fit stuff in especially as I have started to make home made soups and stews more and instead of thowing out whats not used have started to freeze them

    So as hubby has some overtime this week he kindly agreed to buy us a new frrezer, just a small undercounter type which is not sitting under my stairs, plugged in and ready to be filled tomorrow :eek:

    So now all I need are tips on best things to freeze lol I usually have some uncooked meat and chips , fish fingers etc .

    I was thinking lasange, I usually make a large one so not all used at once. What is best way to freeze it ? Do cook it completely or make the mince filling then "assemble " and freeze then finish cooking once defrosted.

    I often have some mashed potatoes left, can I freeze them and mix together at later stage to make say a topping for cottage pie ?

    I buy ready made breadcrumbs to use on chicken gougons, can I make my own and freeze ?

    Sorry for silly questions but usually my freezer is full on convenience foods not home made lol

    I would make the lasagne and part cook it in the oven then finish it off later.
    Yes you can blitz up stale bread (or the ends, we don't like the ends in our house) and freeze them
    Mashed potato freezes well and I don't see why you couldn't combine them later for a topping :)

  • If you've now got 2:D, I'd recommend keeping "raw ingredients" in one and "cooked meals" in the other (if possible).

    It's really easy to keep track of exactly what you've got that way. HTH
