Have done some baking today and wondered if you can freeze the following: Muffins, brownies, iced fairy cakes?
Would also appreciate ideas on tray bakes. Many thanks.

You can freeze most cakes - just lay them out on a tray and open freeze first then put them in bags or boxes that way you don't end up with squishy cakes.Blessed are the cracked for they are the ones that let in the light

could you make the mix and freeze that? like muffin mixes, you could freeze it then take it out the freezer the night before then cook for 20 mins the following morning for a lovely warm breakfast muffin????I love War Of The Worlds:heart2:

I freeze all the things that you have mentioned
I often make a large chocolate victoria sponge or the normal version ... slice it up ... wrap in clingfilm and my OH grabs what he wants before work and its usually defrosted by lunch time

I find most baked goods freeze satisfactorily. In my freezer at the moment there are blueberry muffins and cherry bakewells. Today we have eaten a flan case which had been frozen and then filled but can be frozen with the filling in it. I usually have scones in there but DH had the last one this morning. All tray bakes freeze well and are convenient to just take out a piece or two when needed.
Ooo, better stop, this is making me want to bake. I've just cleaned out my two freezers and they need stocking up again.
