what can i do with left over egg yolks?!?

    I'm trying to do more of the OS cooking etc. Hubby has just gone back on his low fat high protein diet and wants omlettes made with egg whites.

    Question... what do I do with the yolks then? Don't fancy making two separate meals and usually do one big omlette.

    Can I use these in cakes like I would a whole egg? Do I have to add any extra liquid at all?

    All ideas welcome as it seems such a waste to leave out the best bit of the egg :rolleyes:

    By the way, I'm not on the strict diet - hence wanting to use the egg yolks!!

    I used egg whites for meringues the other day and used the egg yolks for a carbonara sauce - not sure that would fit with hubby's diet but it's delicious and very easy to make.

    thanks, I did a search but it came up with pages and pages of threads that didn't seem particularly relevant... guess I didn't enter enough in the search! :o

  • Both my DD's will only eat egg whites so I often have egg yolks left over if I have been doing poached or fried eggs. This morning they wanted poached eggs so I had to separate 4 eggs and now have the yolks which I don't know what to do with. I am ashamed to say I have most of the time thrown them out :eek: unless I was making quiche or egg custard, but today I don't want to make either as I am on a diet so wondered if I could freeze them or if there is anything I could do with them.

  • I've frozen them before, when I was using the whites for something else, then used them for custard or whatever, and I'm still here to tell the tale.
